These Keto Sausage Rolls are a very delicious, tasty, and mouthwatering dish. They are also low in carbs having moist meat in the middle and crunchy pastry outside. We can easily make and store these Sausage Rolls and store in the freezer and bake them when they are required. These Sausage Rolls are prepared with half and half pork and beef meat but we can also prepare them with 100% beef meat; it may change the flavor and texture but the results come out great. INGREDIENTS:

SAUSAGE FILLING:

  • 1 tablespoon Olive Oil
  • 1 small finely chopped Onion
  • 2 pieces finely chopped Garlic
  • 1 teaspoon finely chopped Fresh Thyme
  • Seven ounces Minced Pork
  • Seven ounces Minced Beef
  • Four teaspoons Psyllium Husk
  • Two teaspoons Dried Oregano
  • One teaspoon Salt

PASTRY INGREDIENTS:

  • Six ounces shredded Mozzarella Cheese
  • One ounce Butter
  • Three ounces Almond Flour
  • One teaspoon Xanthan Gum
  • Half teaspoon Salt
  • 1 large Egg

INSTRUCTION:

  1. Preheat the oven to one-six degrees C or three-twenty degrees F.
  2. Take a cookie sheet put the parchment paper on it and places it in the corner.
  3. Get a small fry pan put the pan on moderate flame and drizzle the olive oil into the pan.
  4. Once the oil becomes hot in the pan then include the finely chopped onions, garlic, & thyme in them.
  5. Saute all of them for five minutes till they get softened. Put the pan in the corner to chill.
  6. Take a mixing bowl and add beef & pork meat, dried oregano, psyllium husk, & salt.
  7. Place the small pan on little heat and add the mozzarella & butter to the pan and liquefy them.
  8. Grab another mixing bowl and add the xanthan gum, salt, & almond flour to the bowl and mix them properly.
  9. Include the melted cheese and butter, & eggs in the container and combine all the components to knead even dough.
  10. Take two pieces of parchment paper roll the dough in between and form a rectangular log that is 12 inches wide and 0.25 inches thick.
  11. Carefully roll the dough with the help of a rolling pin & cut 9-inch pieces from them.
  12. Add the sausage mixture to the dough and roll them again.
  13. Place the rolls on the cookie sheet a few inches apart to get them fluff.
  14. Bake the sausage rolls 20 to 25 minutes or till the rolls are stable to touch.
  15. Serve these sausage rolls with keto-friendly ketchup or sauce of choice.

TIPS:

  • Include the fully melted and smooth butter in the dry components, this will make smooth dough and do not make any lumps in them
  • Properly knead the dough before the addition of eggs and mixture of melted cheese and butter. We can add more almond flour if our dough is sticky and make it a smooth dough.
  • Take two pieces of parchment paper and put the dough in among then roll the dough to avoid sticking the dough to the counter or on the rolling pin.
  • Xanthan gum is important to use in keto baking, because it helps to bind the ingredients properly and it also helps to give the structure to the dough and also gives the best results every time.
  • These sausage rolls will easily get brown from the outside due to the presence of melted cheese and butter. So properly watch them during baking to avoid burning the rolls. The rolls should get firm to touch and gets a nice brown color.
  • Put these roll with the space in between them on the cookie sheet; they will evenly bake and have the space to get fluff up.
