Keto Sticky Toffee Pudding is a soft, moist flour (almond) cake made in a sugar-free sauce of toffee. It is a keto version of classic sticky toffee pudding. Keto Sticky Toffee Pudding is low in carb content with just seven grams of carbs per serving. The classic version of sticky toffee pudding requires a date to make it sweeter which has lots of carbs, one Medjool date has 20g of net carbs this is a shocking thing for me. So I made a keto version of this recipe which is date-free and used Yacon syrup for the taste and cocoa powder for the nice brown. You need Allulose or xylitol-based sweetener to make the sauce perfectly.

INGREDIENTS:
Cake:
- Two teaspoons of yacon syrup
- Half a cup of hot water
- Half a teaspoon of vanilla extract
- One and a half cups almond flour
- Half a tablespoon of cocoa powder
- Half a teaspoon of baking soda
- Quarter teaspoon salt
- Six tablespoon butter (softened)
- Third-forth cup swerve sweetener
- Two large eggs (room temperature)
Toffee sauce:
- Six tablespoon butter
- Quarter cup swerve brown
- Quarter cup Bocha sweet
- Half cup heavy whipping cream
- Half teaspoon extract of vanilla

INSTRUCTION:
Cake:
- Take the ceramic soufflé dish and brush the oil on the dish.
- If you want to take out the pudding then place the sheet (baking) on the dish.
- Brush the oil again on the sheet.
- Take a small bowl and mix the two teaspoons of yacon syrup; half a cup of hot water, and half a teaspoon of vanilla extract put it on the side.
- In another bowl, mix almond flour (one and half cup), half a tablespoon of powder (cocoa), half a tsp. of baking soda, and salt with the whisk.
- In a bowl (large) put the butter and sweetener and beat it until light and fluffy (2 minutes).
- Put the eggs and (almond) flour in the fluffy mixture and mix it.
- Pour the hot water mixture into the butter and flour mixture and beat it again until it gets smooth.
- Pour the prepared mixture in the soufflé dish and close it firmly with the foil (aluminum).
- Put the wire rack in the pot (instant) and dispense water (one cup) in the pot. Put the soufflé dish in the instant pot and seal the lid.
- Cook it for forty-five minutes.
- Let the pressure to release on its own from the pot and allow the pudding to be on room temperature completely.
Toffee sauce:
- Place the large pan on the heat (medium)
- Add the six tablespoons of butter and a quarter cup of both sweeteners.
- Mix it and wait it to boil the mixture.
- Decrease the heat (medium-low) and cook it for five minutes.
- Watch the mixture for it to burn or boil over.
- Pour the half cup whipping cream and half teaspoon vanilla extract.
- Mix it with the whisk for two minutes and get smooth.
- Let the pudding on the room temperature before pouring over the mixture.
TIPS:
- Cover the pudding soufflés dish tightly with aluminum foil to prevent the moisture from getting in the pudding.
- Cool down the pudding completely before pouring the toffee sauce over it.
- Sticky toffee pudding also is bake in the oven at three-fifty degrees Fahrenheit.

- Cover the dish properly and stock it for few days (three to four).
Freezer:
- Individually wrap the pudding slices in the freezer film put them in the bag and then store it for a month.
You can store the toffee sauce also.
