Keto Teriyaki Chicken

Keto Teriyaki Chicken is a delicious and flavorful dish that can be enjoyed by those following a keto diet. The chicken is marinated in a homemade teriyaki sauce that is low in carbs and high in flavor. This recipe is easy to prepare and perfect for a quick weeknight meal.

Ingredients:

For the teriyaki sauce:

  • 1/2 cup coconut aminos
  • 1/4 cup apple cider vinegar
  • 2 tbsp swerve brown sugar substitute
  • 1 tbsp sesame oil
  • 1 tbsp minced garlic
  • 1 tbsp grated ginger
  • 1/4 tsp black pepper

For the chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tbsp avocado oil
  • Salt and pepper to taste
  • 1 tbsp sesame seeds (optional)

Instructions:

  1. In a medium-sized bowl, whisk together all the ingredients for the teriyaki sauce.
  2. Place the chicken breasts in a large ziplock bag or a shallow dish, and pour the teriyaki sauce over the chicken. Make sure the chicken is fully coated in the sauce, and marinate for at least 30 minutes in the refrigerator.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Remove the chicken from the marinade and pat dry with paper towels. Discard the remaining marinade.
  5. Brush the chicken breasts with avocado oil and season with salt and pepper.
  6. Grill the chicken for 6-7 minutes per side, or until cooked through.
  7. Once cooked, remove the chicken from the grill and let rest for a few minutes. Sprinkle with sesame seeds (optional) before serving.
