INGREDIENTS:

  • 2 ½ cups diced tomatoes (seeds removed)
  • 6 chicken thighs (boneless and skinless)
  • Salt & pepper (to taste)
  • 2 tablespoons avocado oil
  • 2 garlic pieces
  • ½ cup heavy cream
  • ¼ cup basil (chopped)
  • ¼ cup finely grated parmesan

INGREDIENT NOTES:

Fresh tomatoes:

  • This recipe tastes more with freshly harvested tomatoes. If you have no access to fresh tomatoes we can also use preserved tomatoes (canned). Remove its seed and water before making a paste.

Chicken:

  • I use chicken thigh because it get tender easily. You can use chicken breast as well. But make the pieces of chicken breast so it gets tender in less time.

Garlic:

  • Garlic (fresh) is used in tomato basil chicken. It enhances the flavor of the chicken. You can use canned garlic if fresh is not available.

Heavy whipping cream:

  • I use heavy whipping cream to make the consistency in the recipe; you can also use coconut cream from the top part as a dairy-free option.

Fresh basil:

  • You can make this recipe with fresh basil leaves only. Or you can use frozen basil cubes also but not the dried basil leaves.

Parmesan cheese:

  • I use Parmigiano Reggiano for the tangy taste with sweet tomatoes. We can also use nutritional yeast as well for dairy-free options.

Avocado oil:

  • Avocado oil is used in tomato and basil chicken. You can add oil of olive as well.

INSTRUCTIONS:

Prep the tomatoes:

  1. Slice the tomatoes and remove the excess water. Remove the seeds of the tomatoes with the knife and add in the blender to make its paste.

Prep chicken:

  1. Rinse the chicken with tap water.
  2. Trench the water from the chicken.
  3. Pat dries the chicken with a paper towel to remove any moisture in it.
  4. Sprinkle pinch of salt and pepper to the tomato basil chicken.

Cook the chicken:

  1. Put the skillet on the heat (medium) adds the oil in the skillet and heat it.
  2. Add 6 chicken thighs in the hot oil and cook it for 6 to 7 minutes from both sides till it turns white and cooked almost done.
  3. Take out the chicken from the pot and add the 2 ½ cups tomatoes and 2 pieces of garlic to the pan.
  4. Add salt and pepper to the sauce and boil it for 5 minutes or till it gets thick.
  5. Add the ½ cup of cream and ¼ cup chopped basil and mix it properly.
  6. Transfer the chicken back and cook it for like 5-6 minutes.
  7. When it is done, grate the parmesan cheese over it.

TIPS:

  • The use of fresh tomatoes, fresh basil, and fresh garlic will enhance its taste to the next level.
  • You can de-seed the tomatoes and remove the water from the tomatoes.
  • Blend the tomatoes to cook the dish faster.
  • Properly cooked the chicken before removing it from the pan.

  • Put the tomato basil chicken in the closed box and store it up for 4 days.

FREEZE:

  • You may freeze this dish also just garnish the parmesan when it is ready to serve to avoid splitting the gravy.

  • There is some myth that tomatoes are not good to use in the keto diet. They are actually low in carbs and high in fiber. The actual thing is that store-bought processed products that are made from tomatoes like tomato sauce or tomato puree have added sugar in them making them a bad choice for the keto diet.
  • You can use fresh tomatoes to overcome this problem and make its paste and then cook. Cooking the tomato paste will naturally eliminate the sugar. The fresh tomatoes will only have 4.8g of carbs and 1.5g of fiber in it.
