Keto Wonton Soup

Keto Wonton Soup is a very flavorful soup and a staple food of the Chinese. It is filled with carbs (35g); it is made with pork and shrimp meat. I make the Keto version of this soup. Keto wonton soup is very low in carbs with just 6.7g of carbs. This Keto Wonton Soup is filled with authentic flavors and can be frozen easily for a quick meal, lunch, or dinner.

INGREDIENTS

Wonton meatballs

  • One lb. grounded pork or shrimp
  • One medium green onion (finely chopped)
  • One tablespoon tamari
  • Two teaspoons of fish sauce
  • Half teaspoon salt
  • Half teaspoon pepper
  • A quarter teaspoon of red pepper flakes
  • Sesame oil one tablespoon (Optional)

Soup

  • One tablespoon of sesame oil
  • Four medium cremini mushrooms, sliced
  • Two cloves of garlic
  • One teaspoon of fresh ginger minced
  • Four cups of chicken broth
  • Two baby Bok choi, quarter
  • One medium onion (green)
  • Garnish
  • Toasted sesame oil
  • Tamari
  • Chili oil

INGREDIENT NOTES

GROUND PORK

  • Pork is used in the minced form. You can also use the grounded chicken as well.

GREEN ONION

  • Green onion is a classic addition to Asian soups. It also gives the visual representation of the soup upon garnishing it.

TAMARI

  • Tamari is a no-wheat (gluten-free) soy sauce. It is ideal for keto dishes because of its pleasant taste.

FISH SAUCE

  • The original recipe of wontons had fillings of chopped shrimps with the pork. I add the fish sauce it gives the classic flavor and also makes the process simple.

SESAME OIL

  • Sesame oil is used to give an original taste to the dish. You can add any other neutral oil of your choice.

MUSHROOMS

  • I use the cremini regular mushrooms. You can add any edible mushroom of your choice.

BABY BOK CHOY

  • I add the bok Choy to give the green color and nutrition to the soup.

FRESH GINGER:

  • To get the extra flavor I use the minced ginger. You can also add the grounded ginger as well.

INSTRUCTIONS:

Meatballs:

  1. Take a large vessel and mix all the ingredients excluding sesame oil.
  2. Mix all the ingredients and squeeze them with your hands with all the strength you have to remove the excess water.
  3. Bind everything together.
  4. Take a tray lined with parchment paper. Make 20 small meatballs and place them on the parchment paper.
  5. Put the oil on heat (medium) and cook the meatballs until half done. Just brown all the sides of the meatballs. For this, you can work in batches.
  6. When it is done according to the requirement put it on the plate.

Make the soup:

  1. You can add the fat from the meatballs you cooked and then add the mushrooms, and garlic sautés for about five minutes on medium heat until it gives a nice aroma.
  2. Also, add the ginger and saute it for 30 seconds more.

Boil the soup:

  1. Pour the chicken soup into the pan and boil it. Add the meatballs and boil it more for five minutes or until it is cooked.

Bok Choy:

  1. Include the bok Choy and boil it for a minute or two till it gets wilted.
  2. Set it aside from the heat and garnish it with green onion.

GARNISH:

  1. Serve it with little bowls of tamari, sesame oil, or chili oil. People can add according to their taste.

TIPS:

  • Squeeze the meatball mixture tightly and remove excess water so that it can form shapes easily.
  • Sesame oil is of two kinds one is simple which is added to saute the vegetables and one is tossed oil which is added in the end to give the flavor.
  • Wonton soup is a thin and clear soup so make sure to drain the excess fat from the soup.

STORAGE INFORMATION:

Fridge:

  • You can store it in a sealed container for more than five days.

Freezer:

  • You will also store it for up to months (two) in a sealed box. Freeze without adding bok Choy as it will get mushy.
  • You can also store the meatballs by cooking them properly before.

What is the carb content of wonton soup?

  • Classical wonton soup is high in carbs and has about 25g of carbs per bowl. But the keto version of this soup has low carbs and skips the wonton wrappers but has identical flavors. Make the meatballs in place of wonton wrappers. And has only 4.2g of net carbs per serving.

Are the wontons keto-friendly?

  • Wontons are made with flour wrappers which is not keto-friendly. But you can make the meatballs with the wanton filling and enjoy the same taste.

Is this possible to store the keto wonton soup?

  • You may store this keto wonton soup for more than five days in a sealed vessel in the fridge.
  • If there is a need to freeze this soup, freeze it without adding bok Choy as it will be mushy when the soup gets melted.
