This Keto Korean Beef & Zucchini Noodles is very delicious, tasty, & flavorful. It is very easy to make this Korean beef and a good way to utilize zucchini deliciously. This recipe may not be a fully authentic Korean recipe but there are some traces of it. To make this dish very quickly I utilize minced beef instead of beef slices & I also utilize sugar-free Korean BBQ sauce to make this dish keto-friendly. This dish only requires a few simple keto-friendly alternatives like tamari, swerve brown, allulose, and coconut oil that are easily present in our homes or the grocery stores. INGREDIENTS:

ZUCCHINI NOODLES:

  • 1 ½ lb. zucchini
  • ¼ tsp. salt

SAUCE:

  • ¼ cup tamari
  • 3 tbsp. Swerve Brown
  • Two tablespoon Allulose
  • One tablespoon sesame oil
  • Two tsp. Sriracha optional
  • 2 tsp. grated ginger
  • 2 pieces crushed garlic
  • ¼ tsp. Red pepper flakes

KOREAN BEEF:

  • 2 tbsp. coconut oil
  • 1 1/3 lb. ground beef
  • 1 chopped green onion
  • 1 tsp. Browned sesame seeds

INSTRUCTION:

ZUCCHINI NOODLES:

  1. Take the knife and slice the corners of the zucchini with it.
  2. Then grab the spiral cutter that has large holes and add the zucchini to make its spiral noodles.
  3. Take a colander and put the zucchini noodles in them drizzle the salt in them and mix both of them to combine and put in the corner for one hour.
  4. After one hour pat dry the zucchini noodles with a paper towel.

SAUCE:

  1. Take a glass measuring cup and add the garlic, Sriracha, Allulose, red pepper flakes, ginger, tamari, swerve brown, & sesame oil.
  2. Mix all the ingredients properly with the whisk & put it in the corner.

KOREAN BEEF:

  1. Take a large skillet & put the skillet on moderate heat.
  2. Pour the coconut oil in the skillet & liquefy the oil.
  3. When the oil gets hot properly then adds the beef and stir-fries the beef till it gets properly brown for 7 minutes.
  4. Take the wooden spoon and break the clumps of beef with the back of a spoon.
  5. Add the sauce & green onions to the beef and mix them properly.
  6. Cook the beef & sauce till it gets reduced to half for 2 – 3 minutes.
  7. Include the zucchini noodles in the beef mix them to combine both and cook for another 3 – 4 minutes.
  8. We can garnish the Korean Beef & Zucchini Noodles with sesame seeds and then serve.

SERVING IDEAS:

  • Cauliflower rice greatly pairs as a keto-friendly thing with this Korean beef.

TIPS:

  • We should properly drain the zucchini noodles and also pat dry them with a tea towel to remove any moisture.
  • These zucchini noodles just require 2 – 3 minutes to cook, if it gets overcooked they will become mushy.
  • We can easily customize its sauce according to our likings like we can alter the amount of sweetness, or make it extra or less spicy.
  • If we want to make this dish more healthy and tasty then we can also add some additional keto-friendly vegetables like bell peppers or carrots in them.
