Mushroom Risotto

Ingredients

To make the Weight Watchers mushrooms risotto recipe we need ingredients

  • Vegetable Broth 5 cups, mushroom flavor recommended
  • Unsalted Butter 1/2 tbsp
  • Onion 1 small, cut into fine slices or chopped
  • Cremini Mushrooms 1 pound. We will also use other edible mushrooms i-e Cremini
  • mushrooms, Oyster mushrooms, and morel mushrooms. Cut mushrooms into fine slices
  • White Wine 1/3 cups
  • Uncooked Arborio rice 1 1/2 cups
  • Parmesan Cheese 1/2 cup, grated cheese
  • Salt 1/2 tsp or according to the taste
  • Black pepper 1/4 tsp or according to the taste
  • Fresh parsley 1/2 cups, chopped

Instructions

  1. To make the Weight Watchers Mushrooms Risotto, firstly take a medium size pan and add vegetable broth to this pan.
  2. Stove on and cooked broth at low- medium flame.
  3. When boiled, turn the stove off.
  4. Place the cover on the broth to keep it warm and keep it in reserve.
  5. Meanwhile, take another pan, add unsalted butter, and heat it until it does not melt.
  6. After that, add chopped onions and cook it for at least 5-7 minutes.
  7. When onions turn color pinkish to brownish then add mushrooms
  8. Cook mushrooms on low flame for 5 minutes or until it does not soften
  9. In the next step, add white wine and boil.
  10. Wine is half boiled, reduce the flame. and add rice.
  11. For 5-10 minutes cook rice. But first, we will transfer all cooked vegetables from the pan and put them aside.
  12. After boiling rice in wine, add half of the vegetable broth to the rice and cook it until the broth is not absorbed.
  13. Add the remaining broth.
  14. After the rice is cooked, we will add stir vegetables and parmesan cheese to give it a creamy texture.
  15. At serving time, we will add black pepper and salt to the rice according to the taste.

Tips

Always use hot broth before adding to the rice.

Storage information

We can save risotto in freezers for 2 and 3 days. But risotto is safe in an air-tight jar otherwise, it will get moisture.
