INGREDIENTS:
- Half a cup of natural peanut butter without added sugar
- 1/4 cup granulated zero-calorie sweetener, such as monk fruit or erythritol.
- One big egg
- Half a tablespoon of vanilla essence
- 1/4 cup of packed light brown sugar
- Half a cup of all-purpose flour
- One-fourth of a tablespoon of baking soda
- 1/8 tsp salt
- If you want to use 20 little dark chocolate kisses with/without sugar.
INGREDIENT NOTES:
Peanut butter:
- Select the pure peanut butter that contains just peanuts & salt. It makes the cookie rich & soft.
Sweeteners:
- Combination of brown sugar & a zero-calorie sweetener in order to provide flavor & texture balance.
Egg:
- Acts to combine everything. Mix easily with room temperature.
Flour:
- Best to use all-purpose. There is no need to pack the flour, spoon & level it.
Chocolate kisses:
- You can use mini four-point kisses/sugar-free chocolate, which has fewer points.
Vanilla:
- Boosts the nature of the herb with a warm undertone & mutes the flavor.
Salt & baking soda:
- These make the dough stable & aid in the rising of the cookies, which makes them light.
INSTRUCTIONS:
- First you need to heat up the oven at 175°C (350°F).
- Spread aluminum foil on your baking sheet.
- Put the egg, peanut butter, brown sugar, & sweetener in a mixing dish.
- Stir in vanilla essence till it becomes smooth and creamy in consistency.
- Add the baking soda, salt, & flour. Stir briefly till incorporated.
- Make 1-tablespoon-sized balls out of the dough. After gently rolling, transfer to a baking sheet.
- Every cookie should be separated by around 2 inches.
- Now bake it for the next eight to ten minutes while, the edges are golden and center is soft.
- Take the cookies out of the oven & delicately place a little chocolate kiss into the middle of each one.
- Must give at least 5 minutes to rest for cookies in the pan.
- After transferring to a wire rack, let it cool fully.
TIPS:
- Underbake a little to have softer centers.
- If the dough is too moist, then chill it and allow it to rest in the refrigerator for 10 minutes.
- Turn them into gluten-free using a 1:1 gluten-free flour mix.
- Kiss the press in; do not press too deep or the cookie will break.
- When large kisses are used, 1 to 2 minutes more time is necessary to set.
- The mixing should not be too much so that the textures do not contain firm and hard food.
