Skinny beef Stroganoff

Ingredients

  • Beef 1 Ibs, remove all beef fat and cut into the strips
  • Whole Wheat Egg noodles 4 cups
  • Onion 1, chopped onion or cut into fine slices
  • Mushrooms 10oz. We can use any type of edible mushrooms i-e Portobello, cremini, and cut mushrooms.
  • Beef broth 1 cup
  • Fat-free sour cream 2 tbsp
  • Garlic chopped 1 tbsp
  • Black pepper 1/4 tbsp
  • Olive oil 2 tbsp
  • Fresh parsley 2 tbsp
  • Paprika 1tsp
  • Table salt 1/2 tbsp or according to taste

Instructions

  1. To make this Weight Watcher skinny beef stroganoff, we will prepare the noodles according to the instructions mentioned in the packet.
  2. Meanwhile this time, we will take another large pan and add olive oil over medium flame.
  3. After that, we will add beef to this pan and cook each side for 5-6 minutes until the beef has not changed its color.
  4. We will add salt and pepper over the steak and stir it.
  5. After that, we will add paprika over the beef steak and stir it so the spices mix with the beef steak. Set aside.
  6. In this same pan, we will add a few drops of olive oil over medium flame.
  7. In this pan, we will add sliced mushrooms and saute them for 5 minutes until mushrooms are softened, and then add salt and pepper over these mushrooms.
  8. We will place the mushrooms on a plate.
  9. We will add chopped onion into the pan and stir it.
  10. Stir the onions for 5-6 minutes until the color of the onions has not changed.
  11. After that, we will add chopped garlic in onions and cook it for another 1 minute or a few seconds.
  12. In the next step, we will add beef broth, garlic, salt, and pepper to the pan.
  13. We will cook over medium flame for 5 to 8 minutes until the gravy does not thicken texture.
  14. After cooking, we will stir gravy in sour cream.
  15. Now we will pour the sauce over the meat, and add fresh parsley which enhances the beauty and also flavor of the dish. Serve with the egg noodles.

Always add sour cream at the end of the cooking otherwise it can turn sour.
