Stuffed Pepper Soup

Ingredients

  • Ground Turkey 1 Ibs. You can use chicken or beef.
  • Onion 1, medium size, chopped
  • Bell pepper, 3, cut into slices or chopped
  • Tomatoes 14.5oz
  • Tomato sauce 15oz
  • Brown rice 1/2 cup
  • Chicken Broth 2cups
  • Cooking Spray

Seasonings

  • Garlic clove 1, chopped
  • Oregano 2tsp
  • Black pepper 1/4 tsp
  • Salt 1/8 tsp

Instructions

Prepare Weight Watchers Stuffed Pepper Soup by 3 methods.

Crockpot

  1. First, take a large pan and add the ground turkey.
  2. Brown it over medium flame.
  3. Next, add broth, tomato sauce, tomatoes, chopped peppers, onion, garlic, oregano, black pepper, and salt to the same pan.
  4. Cover the pan with the cover, and cook it at low flame for three to four hours.
  5. Add uncooked brown rice 1 hour before the cooking time is up.
  6. The dish is ready.

Pressure Cooker

  1. First, Add oil to a pan. When the oil is heated, add ground turkey.
  2. Cook it for a few minutes until its colour changes.
  3. Next, add all other ingredients i-e broth, tomato sauce, tomatoes, chopped peppers, onion, garlic, oregano, black pepper, salt, and brown rice.
  4. Cover and cook it at high pressure for 8-10 minutes.
  5. Switch off the stove once all of the ingredients are cooked.
  6. The dish is ready.

Stove Top

  1. First, Add oil to a pan. When the oil is heated, add ground turkey.
  2. Sautee ground turkey for 4-5 minutes.
  3. Next, add all other ingredients i-e broth, tomato sauce, tomatoes, chopped peppers, onion, garlic, oregano, black pepper, salt, and brown rice.
  4. Cook it at a low flame for 20-25 minutes.
  5. Switch off the stove once all of the ingredients are cooked.
  6. The dish is ready to eat and serve.
  7. For the topping, we add grated low-fat cheese.

  1. To make your soup colourful, add different colours of bell peppers like red bell pepper, yellow bell pepper, and green bell pepper.
  2. Add different vegetables.
  3. To improve the flavours, add a pinch of red pepper flakes
  4. Use fat-free ground beef, ground chicken, and ground turkey.
  5. To thicken the soup’s consistency, we can add water or broth.

Notes

If you are using long-grain rice, then increase the cooking time.
For a healthier option, you can use brown rice or cauliflower rice.
