EQUIPMENT:

  • 9 by 9-inch nonstick cake pan
  • One fork
  • Serving Glasses

INGREDIENTS:

  • Seedless watermelon, four and a half cups nearly to 4.5 cups
  • Chopped cucumber 1 1/2 cups
  • Monk fruit sweetener 1/4 cup
  • Fresh lime juice 1 tbsp
  • Thin cucumber slices, for garnish

INGREDIENT NOTES:

Watermelon:

  • Use juicy, in-season watermelon to make the sweetest granita.

Cucumber:

  • Take an English or Persian cucumber and peel it, then discard the seeds.

Sweetener:

  • I use Lakanto monk fruit because it contains no calories and no sugar. Granulated brown sugar can be used.

Lime juice:

  • It is used to add a zesty and vibrant citrus taste.

INSTRUCTIONS:

  1. Peel off the cucumber and cut it into small pieces with a knife.
  2. Next, chop the watermelon into cube sizes.
  3. Now, add lime juice, sugar, cucumber, and watermelon to a blender.
  4. Blend all items for two to three minutes or until the mixture is perfectly blended.
  5. After that, transfer this watermelon batter into a 9 by 9-inch nonstick baking pan.
  6. Now, freeze this tray for approximately one and a half hours until it is almost firm.
  7. Then, scratch it well with a fork to tear down any lumps and mix everything well.
  8. After that, place the baking tray back in the freezer.
  9. Freeze it for an extra one to two hours, or until it is close to hardened again.
  10. After two hours, mash the granita with a fork to create big pieces of ice that resemble snow.
  11. Again freeze it and scrape occasionally until the mixture is completely frozen.
  12. This procedure takes an estimated five hours.
  13. The chilled and tasty Weight Watchers Watermelon Cucumber Granita is ready.
  14. Pour the granita into serving glasses.
  15. Top it with sliced cucumbers and serve.

VARIATIONS:

Fruit:

  • Watermelon can be substituted with fresh strawberries, pineapple, or mango.

Cucumber:

  • If you want only a fruity granita, add one and a half cups of another fruit or twice the watermelon. We will totally skip the cucumber.

Watermelon Mint Granita:

  • Blend fresh and vibrant green mint leaves with other items to make mint granita.

Liquor:

  • Make a granita cocktail by adding gin, rum, or vodka right before serving.

SERVING SUGGESTIONS:

Yogurt Parfait:

  • Top the chilled granita with yogurt, granola, and fresh fruit for a nutritious and filling breakfast or snack.

Toast:

  • Serve it with avocado toast.

Cocktail party:

  • Enjoy it with Spicy Shrimp Ceviche for a cool and unfamiliar drink choice for cocktail parties or outdoor get-togethers.

Snacks:

  • Pair this dessert dish with light snacks such as chicken kabobs, shrimp skewers, veggie kabobs, spicy roasted chickpeas, low-fat cheese crackers, and bite-size turkey rolls.

TIPS:

Ripe Watermelon:

  • The granita will taste better if the watermelon is the sweetener.

Choose a refreshing cucumber:

  • This dish works nicely with English or hothouse cucumbers.
  • Avoid over-mixing the mixture: Blending too much can make the mixture overly watery, so stop once it is smooth.

Lime juice:

  • The flavors of the cucumber and watermelon are enhanced by the lime juice.

Variations of flavor:

  • For a unique twist, experiment with adding different flavors, such as fresh mint or basil, to the mixture.

Sparkling water:

  • Use flavored sparkling water such as lemon or lime to give the granita more taste.

STORAGE INFORMATION:

Fridge:

  • It’s best to serve the chilled granita instantly. I won’t suggest you to refrigerate it.

Freezer:

  • You can store this tasty watermelon granita in a closed box and freeze it for thirty to forty-five days.

FAQs:

Can I use other types of melon?

  • Watermelon is the best choice for this dish, but you can use other kinds of melon, like honeydew or cantaloupe.

Do I need to add sugar?

  • No, it is not necessary because watermelon and cucumber naturally produce sweetness.
