INGREDIENTS:

  1. One cup of fat-free plain Greek yogurt.
  2. 1 (1 ounce) container of sugar-free instant chocolate pudding

  4. A single cup of fat-free whipped topping (Cool Whip Free/similar).
  5. 1 teaspoon vanilla essence.
  6. Pinch of salt.
  7. Optional: 1 tbsp unsweetened cocoa powder to provide depth.
  8. Optional garnishes include raspberries, grated dark chocolate, & mint.

INGREDIENT NOTES :

Greek yogurt:

  • Adds rich creamy texture to the mousse & makes it protein-rich & fat-light. Always utilize plain Greek yogurt, and make sure it is non-fat to maintain a low Smart Points level.

Pudding mix:

  • To make a thick & rich flavor, add sugar-free instant chocolate pudding that will not contain sugar. Stay away from cook-and-serve ones.

Milk:

  • Skim milk/unsweetened almond milk can be used, and it retains the mixture light & smooth. Best results are obtained with cold milk.

Whipped topping:

  • Fat-free whipped topping gives body & a lightness. And use it when thawed and folded lightly to make it fluffy.

Vanilla extract:

  • It promotes the taste of chocolate and adds balance to the mousse.

Cocoa powder:

  • Optional, Dissolved coca powder when required to give an extra intensity to the chocolate. Use unsweetened in order to save points.

Salt:

INSTRUCTIONS:

  1. Pour cold milk into a mixing dish & bake in the chocolate pudding mix.
  2. Beat for about 2 minutes, till somewhat thickened.

  4. Mix again to make it smooth and creamy.
  5. A spatula may be used to fold in the thawed whipped topping.
  6. To retain airiness, blend thoroughly but do not overmix.
  7. Spoon the mousse into six tiny cups/ramekins.
  8. Using a plastic spatula/the back of a spoon, and make smooth the tops.
  9. Wrap each portion in plastic wrap and freeze for 2 to 3 hours, or until fully set.
  10. Serve chilled, with optional toppings such as strawberries, chocolate, or a mint leaf.

TIPS:

  • Make use of an electric mixer to have a fluffier mousse in a shorter time.
  • To get more of a chocolate taste, add a pinch of additional cocoa powder.
  • Prepare the day before to allow more time to chill and more texture.
  • Sprinkle with crushed graham crumbs without sugar or berries, in parfait fashion.
  • Present in wine glasses or jars to have a beautiful serving during the events.
  • When whipped topping is added, do not overmix as the mousse can lose its fluffy quality.

STORAGE INFORMATION:

FRIDGE:

  • Refrigerate mousse in containers with air circulation or covered cups. you can keep it for the next 2 to 3 days. If liquid separates, carefully stir before serving.

May I use pudding flavors other than these?

  • Yes! Sugar-free vanilla instant pudding or cheesecake is a different flavor base that you can use. Blend with cocoa to retain a taste of chocolate.
