INGREDIENTS:

  • Butter 2 tbsp
  • 2 cans of corn, approx. 15 oz.
  • Low-fat Cotija cheese 1/3 cup
  • Plain Greek yogurt 6 tbsp
  • 6 tablespoons of Low-fat cottage cheese
  • Chopped parsley 2 tbsp
  • Lime juice 1 tsp, or to taste
  • Chili powder 1 tsp
  • Garlic powder half a teaspoon

TOPPINGS (OPTIONAL):

  • Fresh lime juice
  • Cilantro
  • Lime zest
  • Tajin seasoning

INGREDIENT NOTES:

Corn:

  • This dish works well with canned sweet corn kernels, but you can also use frozen or fresh corn kernels.

Butter:

  • It is used to roast corn. Replace the unsalted butter with other cooking oil like olive oil.

Cotija Cheese:

  • It is also known as Mexican aged white cheese. The creamy and salty flavor of cotija cheese is ideal for this dip.

Plain yogurt:

  • I used plain and unsweetened Greek yogurt. This is a healthier alternative to the sour cream or mayo that is typically served with elote.

Parsley:

  • We used fresh parsley. It looks lovely as a garnish.

 

INSTRUCTIONS:

  1. Shift a nonstick cooking pan to a medium stovetop flame.
  2. Coat each side of the pan with butter. Warm it for forty to seventy seconds.
  3. Next, add canned corn to the butter.
  4. Simmer it for eight to ten minutes to a moderate flame.
  5. After that, shift the roasted corn to a bowl. Put the bowl aside for a short while.
  6. Next, add Cotija cheese, chili powder, lime juice, plain Greek yogurt, chopped parsley, and garlic powder to the corn bowl.
  7. Combine all items with a spoon.
  8. Sprinkle over crushed black pepper and salt to flavor.
  9. Top it with lime zest, cilantro, or Tajin seasoning.
  10. The creamy Weight Watchers Elote dip is ready.
  11. Serve it with low-fat crackers or tortilla chips.
