Weight Watchers Onion Soup

Weight Watchers Onion Soup is a traditional French dish, originated from France. It is a delicious and fulfilling soup prepared with onions. This soup is usually served with melted cheese and slices of toasted bread. The French onion soup has its roots in the Roman era, when onions were common and well-known for their medicinal properties. Now, this soup is famous in many popular restaurants. You can modify this soup in a few thoughtful ways to fit it into the Weight Watchers program. This Weight Watchers Onion Soup is made with inexpensive ingredients. It is a tasty and easy-to-make soup perfect for hectic weeknights. Let’s prepare the soup with the ingredients (listed below).

Ingredients

  • Beef Broth 1 cup
  • White Onions 500g
  • Light Butter 1tsp
  • Olive Oil 1tsp
  • Cornstarch 1tsp
  • Slices of Artisanal Bread 8
  • Grated Mozzarella Cheese 1/2 Cup
  • Shredded Emmental Cheese 1/4cup
  • Salt 1 pinch
  • Grounded Black Pepper 1/4tsp or add to taste
  • Dried Thyme 1/2tsp

Ingredient Notes

Onion:

  • I used a maximum of 5 medium-sized onions, 500 g in total. Yellow onions are the first priority on my list. Otherwise, you can use yellow or red onion.

Beef broth:

  • It is more nutritious than Chicken broth. But you can use both broths. It equally works.

Cornstarch:

  • It helps to thicken the amount of soup.

Cheese:

  • I used two types of cheese mentioned above in the ingredients. Both types of cheese are different in flavor and texture.

Black pepper:

  • We used fresh crushed pepper. Red chili pepper is also a good alternative.

Thyme:

  • I used dried thyme to make the soup. You can add fresh thyme.

 

Instructions

  1. First, chop the onions into round ring size using a knife.
  2. Next, put butter and olive oil in a pot.
  3. Warm it for 1/2 minutes or until the butter melts.
  4. Add round-size onions to the heated butter and oil.
  5. Simmer it continuously at low heat for 14 to 18 minutes or until it’s medium golden brown.
  6. After that, mix dried thyme, cornstarch, and beef broth in a bowl.
  7. Whisk well to make it lumps-free.
  8. Next, pour this cornstarch mixture over the golden brown onions.
  9. Use a cooking spoon to combine the ingredients thoroughly.
  10. Cook it to a medium flame for 9 to 11 minutes.
  11. Next, fill four ovenproof dishes with 1 1/2 cups of soup.
  12. Top each bowl with slices of toasted bread and grated cheese.
  13. Transfer these soup bowls to the oven.
  14. Bake them for 3/5 minutes or until the cheese is dispersed into the soup.
  15. The tasty Weight Watchers Onion Soup is ready.

Variations

Broth:

  • I used homemade beef broth. You can use store-bought canned broth. Low-sodium vegetable and chicken broth are also used.

Low-carb option:

  • To make this soup low-carb, use steamed cauliflower instead of bread to support the cheese. My favorite low-carb method is to make Parmesan crisps without bagel spices and use that top to retain the melted cheese.

Gluten-free:

  • Swap the normal bread with bread which is gluten-free.

Cheese:

  • You can use different varieties of cheese like low-fat mozzarella cheese, provolone, fontina, or gruyere as your choice.

Protein option:

  • You can add lean protein such as chopped and cooked chicken to the soup to increase its nutritious content. It can increase the protein level and add a soothing element, making the soup more wholesome.

 

Tips

  • You may prepare the soup more quickly by using ready-made broth. This can save your time while still providing a tasty soup base.
  • Add a few drops of dry white wine to the onions. The wine enhances the savory flavors and produces a more complex flavor. Before starting the recipe, just make sure to let the alcohol evaporate.

Storage Information

Fridge:

  • We pour the leftover soup into a sealed plastic box or vessel and refrigerate it for 3/4 days.

Freezer:

  • Chill the soup at normal temperature and after that place it in the freezer for 3 to 4 months. You can shift the frozen soup box to the fridge 24 hours ago to reheat.

Reheating:

  • The soup can be reheated in a skillet. Heat the pan for 5/7 minutes on medium-low flame. A microwave oven is also a good option to reheat the soup.

Write the difference between Mozzarella cheese and Emmental cheese?

  • Mozzarella Cheese has a semi-soft texture with a mild, tangy flavor. It gives a creamy taste. Compared to Emmental cheese, have a sweet, nutty flavor with a normal hard texture. It is also known as Swiss cheese.

Can we pair this soup with other side meal options?

  • You can enjoy it with cheese-topped crouton. Simply grill or broil a slice of Artisanal Bread or Baguette and sprinkle cheese on top to make a cheese-topped crouton. You may also add cheese-topped bread to the soup and return it to the grill or broiler until the cheese dissolves and the color changes.
