INGREDIENTS:

  • A sheet of thawed light puff pastry, such as Pepperidge Farm Light or a comparable type
  • One and a half tablespoons of ground cinnamon & two medium apples, chopped up and peeled finely
  • Half a teaspoon of vanilla essence
  • One and a half teaspoons of brown sugar alternative (such as Truvia or Swerve)
  • Half a teaspoon of cornstarch
  • A single tablespoon of lemon juice
  • One teaspoon of salt & one egg white for brushing (optional)
  • An alternative to dusting is powdered sugar (optional).

INGREDIENT NOTES:

Puff pastry:

  • Reduce the points by using a light/Reduce fat by frozen puff pastry. Keep in fridge, thaw and use.

Apples:

  • Sweet & crispy varieties such as Gala/Fuji are fantastic. Make change it into small pieces so, they can cook very fast.

Cinnamon:

  • It add nice warm spice flavor & balance sweetness naturally.

Sweetener:

  • It has to be WW-friendly so use a sugar substitute that is measured as sugar.

Cornstarch:

  • Assists in thickening of the filling & preventing the pastry to be wet.

Egg white:

  • Golden color is brought by brushing. You can leave it out & make it eggless.

Powdered topping:

  • Strongly suggested sprinkling of sugar free powdered sweetener to give it an antique bakery appearance.

INSTRUCTIONS:

  1. Set the oven temperature to 375°F (190 °C). Put sheet of parchment on a baking pan.
  2. Add apples, cornstarch, lemon juice, cinnamon, sweetener, vanilla, and a bit of salt in a bowl. To coat apples, stir.
  3. Cut the puff pastry into six equal rectangles after unrolling it.
  4. With space left at the edges, On one half of each rectangle, spread a dollop of the apple mixture.
  5. Press the edges with a knife or fork together after folding to seal.
  6. Line the baking sheet with the pastries.
  7. Using a knife, cut a little vent on top of each.
  8. If used, gently brush with egg white.
  9. Bake till brown and puffy, 18 to 20 minutes.
  10. Give it five minutes to cool. If desired, sprinkle with powdered sugar substitute.
  11. Warm as well as room temperature, serve.

TIPS:

  • The pastry may break during baking if it is packed too densely.
  • When it becomes too soft, chill the pastry slightly, before folding.
  • Alternatively, use silicone mat instead of parchment paper to make the bottoms less soft.
  • Add a small amount of ginger or nutmeg in there for some spiciness.
