INGREDIENTS:
- One pound of ground chicken/turkey that is 99% lean
- 1 little onion, chopped
- One sliced bell pepper
- One can of washed & drained kidney beans
- A single serving of drained corn without additional sugar
- One can of chopped tomatoes without salt
- A 15-ounce can of crushed tomatoes
- Two cups of low-sodium chicken/veggie broth
- One taco spice packet (or two tablespoons of homemade mix)
- A teaspoon of cumin
- One teaspoon of chili powder

INSTRUCTIONS:
- Put a large pot into the heater (medium heat).
- Put in ground turkey or chicken.
- Brown and break into pieces.
- Add bell pepper and onion, diced.
- Brown in a small amount of hot fat for 4 to 5 minutes.
- Add taco seasoning, cumin, and chili powder.
- To this add black beans, kidney beans, and corn.
- Add chopped and smashed tomatoes.
- Add broth. Mix all of it.
- Heat the soup to a simmer.
- Slow down the heat to low and cover.
- Cook for 20 minutes/25 minutes.
- Season and add salt and pepper.
- Serve with options of toppings.
TIPS:
- Make use of a slow cooker. Brown the meat and fully stew it for 6 to 8 hours on low.
- Add jalapeƱos or cayenne pepper and make it spicy.
