INGREDIENTS:
- Thinly slice two big cucumbers.
- 1/2 cup plain, nonfat Greek yogurt.
- 2 tbsp freshly chopped dill (or 1 tsp dried dill)

Cucumbers:
- Less bitter and fewer seeds are found in English cucumbers. Cut them thin to have a good texture. Ordinary cucumbers as well–peel them when they are hard-skinned.
Greek yogurt:
- Low points: non-fat plain Greek yogurt. It makes the dressing thick & gives protein. Do not use flavored forms or sweetened forms.
Dill:
- The salad has a unique flavor thanks to fresh dill. Dried dill will do in place of fresh, but less of it.
Vinegar:
- White vinegar maintains the taste lively & clean. To taste the apple cider vinegar leaves it a little sweet. Choose what you like.
Mustard:
- Dijon mustard gives a more colorful flavor and vibrancy. It is optional, yet highly advisable.
INSTRUCTIONS:
- Wash and thinly slice the cucumbers. Put them in a basin.
- In another bowl, combine the yogurt, vinegar, mustard on the side, dill, ginger powder, salt, and pepper.
- Pour the dressing over the cucumbers.
- Gently mix till the slices are equally coated. If using red onions, slice them thinly.
- Refrigerate for 10 to 15 minutes before serving (optional but suggested).
- Serve chilled and enjoy!
TIPS:
- To get extra crunch, slip the cucumbers in the refrigerator before cutting.
