INGREDIENTS

  • One cup of mixed dried fruit, including chopped dates, cranberries, & raisins
  • Half a cup of applesauce without sugar
  • 1/3 cup of packed brown sugar
  • 1/4 cup melted margarine / light butter
  • Two eggs
  • 1/4 cup almond milk, unsweetened
  • One teaspoon of vanilla essence
  • 1 cup of all-purpose flour
  • Half a cup of whole grain flour
  • One teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • Half a teaspoon of nutmeg, ground
  • 1/4 tsp ground cloves
  • One-fourth of a teaspoon of salt
  • 1 orange’s zest
  • Optional: 1/4 cup chopped pecans or walnuts

Mixed Dried fruit

  • Any combination of raisins, chopped dates, cherries/currants may be used. Go without the sweet to watch sugar.

Applesauce:

  • Substitutes oil and prevents the cake from getting dry. Try to use unsweetened.

Butter/margarine:

  • Not much is necessary to flavor. Melt, and then mix.

Eggs:

  • Aid the cake to rise and bond. Use flax eggs to veganize.

Almond milk:

  • Low-calorie option. Any non-milk substitute can be used.

Flour:

  • Combining the whole wheat & white gives depth and structure.

Spices:

INSTRUCTIONS:

  1. First, you warm up the oven’s temperature to 350°F (175°C).
  2. Line a circular cake pan/loaf pan with paper.
  3. Put the applesauce & dry fruit in a bowl. To soften the fruit, let it sit for ten minutes.
  4. Whisk together eggs, almond milk, melted butter, brown sugar, & vanilla in a big bowl.
  5. To the wet ingredients, add the fruit-applesauce combination. Mix till incorporated.
  6. Mix the flours, baking soda, cloves, nutmeg, cinnamon, & salt in a separate bowl.
  7. Slowly mix the dry conponents into the wet ones. Till completely smooth, mix.
  8. Stir in optional nuts & orange zest.
  9. Pour batter into the prepared pan. Smooth the top using a spatula.
  10. For 45 to 55 minutes, bake. The core of a toothpick should come out clean.
  11. Give to it ten minutes rest to cool in the pan. To complete cooling, move to a wire rack.
  12. Slice & serve once fully cooled.

TIPS

  • When flour is incorporated, do not overbeat as this makes the cake hard.
  • Before baking, sprinkle some cinnamon sugar on the crust to make it golden.
  • After cooling in foil, place the wrapped cake in the refrigerator and let it sit for a day to lock in the taste.
  • On the gifts, make them in mini loaf pans and tie them up with a ribbon.

STORAGE INFORMATION

Can I just use whole wheat flour?
