  7. Mix vanilla extract, lemon juice, cornstarch, and lemon zest completely.
  8. Add the mixture on the cooled crust and make the tops smooth.
  9. Bake the cheesecake for 35 minutes, then open the door of the oven for 10 minutes.
  10. Take the cheesecake from the oven to cool well on the wire rack.
  11. Cover the cake and chill for 4 hours, then decorate with sliced strawberries, mint leaves, and blueberries.
  12. Lastly, cut the cheesecake into 8 equal slices and serve.
