INGREDIENTS:
- 1 tbsp olive oil
- Half tsp dried oregano
- 2 cups cooked chickpeas

LEMON JUICE:
- It gives acidity and maintains the richness of olive oil. Lemon works well with parsley, mint, garlic, and oregano as well. Utilize apple cider vinegar as an alternative instead.
INSTRUCTIONS:
- First, rinse the drained chickpeas properly and dry them well.
- Include the chickpeas in the food processor and pulse several times to mash them.
- Add the mashed chickpeas, onion, garlic, parsley, breadcrumbs, salt, lemon juice, 1 tbsp olive oil, oregano, black pepper, and mint to the large bowl.
- Mix all the ingredients properly and add one tbsp flour at a time if the mixture feels wet.
- Cool the mixture for 5 minutes and divide it into small portions.
- Shape those portions into small balls, then flatten them slightly so they cook well.
- Warm the frying pan on medium flame and add 2 tbsp olive oil to it.
- Cook the keftedes in the pan for 4 minutes on the first side, then second side for 4 minutes.
- Lastly, add the keftedes to a plate and serve warm.
