INGREDIENTS

  • 1½ cups of cashews, roasted & unsalted
  • Half a cup of dark chocolate chips without added sugar
  • For a smoother melting, add one teaspoon of optional coconut oil.
  • Half a cup of sugar-free white chocolate chips
  • An optional pinch of sea salt

INGREDIENT NOTES

Cashews:

  • The best-tasting & crunchiest come from roasted, unsalted cashews. Lightly toasting raw cashews beforehand can bring a more concentrated nutty taste.

Dark chocolate chips:

  • Sugar-free dark chocolate chips keep SmartPoints lower but offer a full, deep flavor to balance out the sweetness.

White chocolate chips:

  • Sugar-free white chocolate chips bring a creamy contrast and the classic zebra stripe look against the darker chocolate.

Coconut oil:

  • A small amount keeps the chocolate from becoming grainy, making it silky & glossy.

Sea salt:

  • Sea salt. One sprinkle from a pinch sharpens the taste, balances the sweetness & adds a trace of gourmet.

DIRECTIONS

  1. Use silicone mats/paper towels to cover the baking surface.
  2. Melt the dark chocolate chips & ½ teaspoon coconut oil in a oven-safe dish, stirring every 20 seconds till it smooth.
  3. Melt white chocolate chips in a separate basin using ½ teaspoon coconut oil in the same manner.
  4. Coat the cashews completely by stirring them into the melted dark chocolate.
  5. Spoon tiny clusters of the cashew-chocolate mixture onto the prepared baking sheet.
  6. For a zebra stripe look, drizzle each cluster with melted white chocolate.
  7. Optional: Sprinkle the chocolate with a little sea salt while it’s still soft.
  8. To make the clusters solid, place the baking sheet in the refrigerator for 20 to 25 minutes.
  9. Preserve in the freezer in a tightly sealed bag before you’re ready to serve.

TIPS

  • Add some puffed rice cereal to the cashews to bring some additional crunch.
  • In order to avoid seizing of chocolate, always melt slowly & stir frequently.
