- 3 zucchini (medium & thinly sliced)
- 1 cup fat-free ricotta cheese
- Half cup mozzarella cheese (reduced-fat, shredded)
- 1 tsp garlic powder
- ¼ cup Parmesan cheese (grated)
- One cup of marinara sauce (no sugar)
- 1 large egg white
- One tsp seasoning (Italian)

- This is the main thing in this lasagna recipe. Rather than lasagna noodles, we will be using zucchini slices. Zucchini has a naturally low level of carbs and calories. The taste of this ingredient is also not that strong. For an alternative, use slices of eggplant.
FAT-FREE RICOTTA CHEESE:
- Fat-free ricotta cheese can easily provide the roll-ups with creaminess, and it also does not raise WW points much. Hence, it will provide the classic cheese feeling but in a lighter form. You may also blend low-fat cottage cheese for substitution.
REDUCED-FAT MOZZARELLA:
- This can give the roll-ups the classic cheesy feel without the heaviness. Weight Watchers can easily consume this mozzarella. Another option for this can include fat-free mozzarella.
PARMESAN CHEESE:

INSTRUCTIONS:
- Warm your oven to 190°C.
- Then you need to cut the zucchini into thin strips and sprinkle some salt on top.
- After 10 minutes, dry the zucchini slices.
- Take a bowl for mixing all the components except the sauce, zucchini, and parsley.
- On base of the baking dish, put some amount of marinara sauce & spread it.
- Take some of the filling from the bowl and start placing it over the zucchini slices.
- Roll up the slices and place each on the baking dish with the folded side downwards.
