INGREDIENT NOTES:

SHREDDED CHICKEN:

  • Add the rotisserie chicken or cooked chicken breast to make these bites. We have to make fine chicken shreds so it mixes more equally in the creamy filling & keeps the bites soft.

CHEDDAR CHEESE:

  • Add the sharp cheddar to provide the indulgent taste, and it also melts nicely. It is best to utilize freshly shredded cheese, as it melts more smoothly than pre-shredded cheese.

CREAM CHEESE:

  • Add the soft cream cheese to make this filling. It will mix easily with the filling and also help to combine everything nicely. Use the reduced-fat cream cheese, as it works nicely and also controls the calories.

GREEK YOGURT:

  • Greek yogurt will make the filling creamy and also provide protein. It will keep the filling light and tasty.

RANCH SEASONING:

  • Add the dry ranch seasoning mix, which will provide the real tang taste. We have to adjust the quantity as we like.

GREEN ONIONS:

  • Fresh green onions offer a light onion taste and color in the filling. They will not add the intense taste to the filling.

FLOUR TORTILLAS:

  • Utilize the small size of flour tortillas to roll them tightly and cook them equally. Warm the tortillas before use so they don’t crack while rolling.

OLIVE OIL SPRAY:

  • Spray the oil lightly on the taquitos so they get brown and crisp lightly without the addition of extra oil.
