ZUCCHINI:
- Zucchini is the main ingredient of these spring rolls. We have to use firm and medium-sized zucchini to provide the firm texture and taste. Dry them properly, then fill to avoid additional moisture.
COTTAGE CHEESE:
- Cottage cheese makes the creamy filling. It also offers protein and makes the dish light and satisfying. We can use both low- and full-fat cottage cheese, as we like; both will work the same.
MOZZARELLA CHEESE:
- Mozzarella cheese offers a slight cheesy taste and also helps to bind the filling. Shred the cheese fresh, as it melts properly, instead of pre-shredded cheese.
SEASONINGS:
- Add the garlic powder, black pepper, Italian seasoning, and salt to season the dish. They will provide the savory and herby taste and aroma along with light spice. Salt will enrich the taste of these spring rolls.
OLIVE OIL:
- Olive oil is used to coat these spring rolls so they get brown and crisp nicely. It will also help to prevent the sticking of these rolls.
OPTIONAL:
- Add the spinach, bell pepper, and carrots to offer the healthy nutrients and color in these spring rolls.
INSTRUCTIONS:
- Pre-warm the air fryer at 375°F for three minutes.
- Then make lengthwise slices of zucchini with the mandolin slicer.
- Now dry the zucchini with paper towels.
- Add the cottage cheese, egg, mozzarella cheese, vegetables, and seasoning, and mix them properly.
- Put the zucchini slices on a shelf, add one spoon of filling in one corner of the zucchini slice, and roll them tightly.
- Now put these spring rolls in the basket and apply the oil with a brush on them.
- Then air-fry these rolls for twelve to fifteen minutes and flip them in between.
- Leave them for two to three minutes, then serve.
