Ingredients

  • Boneless Breast Chicken 2 pieces
  • Olive Oil 1/2tbsp
  • Dried Oregano 1/2tsp
  • Paprika powder 1/4tsp
  • Dried Basil 1/2tsp

  • Dried Thyme 1/2tsp
  • Black Pepper 3/8tsp
  • Chopped garlic cloves 1

Salad

  • Sliced Cucumber 1
  • Cherry Tomatoes 1
  • Diced Red Onion1
  • Red Bell pepper 1
  • Yellow Bell Pepper 1
  • Diced Avocado 1
  • Sliced Olives 1/2cup
  • Shredded Feta Cheese 1/2cup

Salad Dressing

  • Fresh Squeezed Lemon Juice 2tbsp
  • Red Wine Vinegar 2tbsp
  • Olive Oil 1tbsp
  • Dijon Mustard 1tsp
  • Chopped garlic clove 1
  • Dried Oregano 1tsp
  • Salt, a pinch
  • Black pepper, according to taste

Ingredient Notes

Chicken: I used boneless and low-fat chicken. It will reduce the calories and Weight Watchers points.
Olive Oil: You may use cooking spray instead of oil.
Paprika Powder: It is used to give a chili flavor. You may also use red chili pepper flakes to add a spicy taste.
Bell pepper: I used different bell peppers red, and yellow. It makes the salad more presentable.
Avocado: It gives an enriching and yummy taste. Make sure to add avocado slices before serving. If we add slices after serving, it will ruin the taste of other salad vegetables.
Lemon Juice: Replace it with citrus juice like lime, or fresh orange juice.

Instructions

  1. Heat the oven to 425 degrees after turning it on.

Marination

  1. Cut away the extra fat from the chicken with the help of a knife.
  2. Next, add thyme, salt, oregano, black pepper, basil, chopped garlic cloves, and paprika powder in a mixing bowl.
  3. Combine well all spices with the help of a spoon.
  4. Mist the chicken breast pieces with the olive oil by using a brush.
  5. Next, coat each side of the chicken with spices. Marinate it well.
  6. Shift the marinated chicken to a baking tray. Bake it in a heated oven for 17/20 minutes.
  7. Meanwhile, we will chop the vegetables.

  1. Add the salad dressing to the chopped vegetables bowl.
  2. Combine until it merges well with vegetables. Garish over the feta cheese.
  3. Next, cut the baked marinated chicken into strips.
