Recipe: Keto Banana Muffins

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol (or your preferred keto-friendly sweetener)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 4 large eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened almond milk (or any low-carb milk of your choice)
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon banana extract (optional, for flavor)
  • 1/4 cup chopped walnuts (optional, for added texture)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, whisk together the almond flour, coconut flour, granulated erythritol, baking powder, baking soda, salt, and ground cinnamon.
  3. In a separate bowl, beat the eggs. Add the melted coconut oil, almond milk, vanilla extract, apple cider vinegar, and banana extract (if using). Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until a thick batter forms. Fold in the chopped walnuts, if desired.
  5. Divide the batter evenly among the muffin cups, filling each one about 2/3 full.
  6. Bake in the preheated oven for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  7. Remove the muffins from the oven and let them cool in the tin for a few minutes. Then transfer them to a wire rack to cool completely.
