Keto Funnel Cake Recipe:

Ingredients:

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons granulated sweetener (such as erythritol or monk fruit)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup unsweetened almond milk (or any preferred low-carb milk)
  • Coconut oil or other keto-friendly oil for frying
  • Powdered sweetener for dusting (optional)

Instructions:

  1. In a mixing bowl, whisk together the almond flour, coconut flour, granulated sweetener, baking powder, and salt.
  2. Add the vanilla extract, eggs, and almond milk to the bowl. Whisk everything together until a smooth batter forms.
  3. Heat coconut oil or your preferred keto-friendly oil in a deep skillet or pot over medium heat. Make sure there is enough oil to allow the funnel cake to float.
  4. Once the oil is hot, pour the batter into a funnel or a squeeze bottle with a wide opening. Hold the funnel or bottle over the hot oil and carefully release the batter, moving in a circular motion to create a funnel cake shape.
  5. Fry the funnel cake for approximately 2-3 minutes on each side, or until golden brown. Use tongs or a slotted spoon to carefully flip it over.
  6. Once both sides are cooked, transfer the funnel cake to a paper towel-lined plate to remove any excess oil.
  7. Repeat the process with the remaining batter, adding more oil if needed.
  8. If desired, dust the funnel cake with powdered sweetener before serving.
  9. Serve the Keto Funnel Cake warm and enjoy!
