Keto Cheesy Croissants are perfect to consume as a breakfast or as a side with dinner. It is made with flour coconut and mozzarella cheese and has also a low carb content. They are very easy to make and you can utilize these croissants to make flavorful dishes like pepperoni rolls or we can also spread some salty butter on the croissants. We can also have it free of sugar raspberry jam for breakfast. It just takes a total of 35 minutes to make with all cooking and preparing time included. It has just 5g of carbs, 3g of fiber, 2g of net carbs, and 10g of protein per serving. INGREDIENTS:

  • 207g of mozzarella cheese
  • 2 ounces of cream cheese
  • 1 tsp. of baking powder
  • 46g of coconut flour
  • 8gm psyllium husk powder (1 tsp.)
  • Pinch of salt
  • 2 tbsp. butter

INGREDIENT NOTES:

MOZZARELLA CHEESE:

  • Mozzarella cheese is used to provide the texture to the croissants.

CREAM CHEESE:

  • I use cream cheese to make these croissants; if cream cheese is not available at home you can use ricotta cheese or Neufchatel cheese. Neufchatel cheese contains less content of fat than cream cheese.

FLOUR:

  • I use coconut flour combine with psyllium husk, and baking powder to make these croissants.

PSYLLIUM HUSK POWDER:

  • I use psyllium husk powder in the recipe for buttery croissants; if you don’t have the powder available you can use whole psyllium husk, chia seeds, or ground flax seeds.

BUTTER:

  • I use unsalted butter to make these buttery croissants to include the salt according to my taste. We can also use salted butter but do not add any extra salt over it.

INSTRUCTIONS:

  1. Heat the oven to Three Fifty degrees F.
  2. Take a bowl (microwave-safe) and include the cheese (mozzarella) and cheese (cream) in the bowl.
  3. Microwave the bowl at 30-second intervals till both of them get melted and combine well.
  4. Take the mixing bowl and add the melted mozzarella, and cream cheese in the bowl.
  5. Then add psyllium husk powder, egg, salt, and baking powder in the bowl and mix it.
  6. With the beater, make your dough till it forms.
  7. Put the parchment paper on the shelf put the dough over it and place other parchment paper on the dough.
  8. Flat the dough with the hands softly.
  9. Then gently roll it with the rolling pin into ¼ inch thick sheet.
  10. Slice the dough into 4 squares with the knife and again diagonally cut the squares to make the triangles.
  11. Then roll the triangles to give the shape of croissants.
  12. Bake the croissants for fifteen to twenty minutes and till they get a nice brown color.
  13. When it is baked brush it with melted butter.
  14. Now, your Keto Cheesy Croissants are ready to serve.

TIPS:

  • Melt your cheese before adding it to the dough.
  • If the dough is sticking in your hands; add more flour (coconut) in the dough mixture.
  • Shape your croissants when your dough is a little warm; it helps to mold the dough easily.
  • Add beaten egg or melted butter if your dough has a crumby texture.
  • When you are rolling your dough put it between two sheets of parchment paper during rolling it.

STORE ON THE COUNTER:

  • Put these buttery croissants in the sealed box and stock it up for five days on the counter.

FRIDGE:

  • You can put these buttery croissants in a sealed container and stock them for at least 2 weeks.

FREEZE:

  • First, you freeze your croissants in flash freezing; when done.
  • Put your croissants in the zip-lock bag and stock it up for 5 months.

  • You can use whole psyllium husk, ground flax seeds, or chia seeds to make the dough. It may give a little different texture, but give the same results.
