A keto chicken quesadilla is a delicious low-carb and high-protein meal that is perfect for those on a keto diet.

Ingredients:
- 2 low-carb tortillas (such as Mission Carb Balance)
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1 cup cooked and shredded chicken breast
- 1/4 tsp. chili powder
- 1/4 tsp. cumin
- 1 tbsp. olive oil
- 1/4 tsp. garlic powder
- Salt and pepper, to taste
Instructions:
- In a small bowl, mix together the chili powder, cumin, garlic powder, salt, and pepper.
- Heat a large skillet over medium-high heat. Add the olive oil and swirl to coat the pan.
- Add the diced onion and bell pepper to the skillet and cook until they are softened, about 3-4 minutes.
- Add the shredded chicken and spice mixture to the skillet. Combine it by stirring and cook until the chicken is heated through, about 2-3 minutes.
- Remove the chicken mixture from the skillet and set aside.
- Place a tortilla in the skillet over medium heat. Sprinkle half of the shredded cheese on one side of the tortilla.
- Add half of the chicken mixture on top of the cheese. Fold the tortilla in half, pressing down with a spatula to seal.
- I cooked it for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted.
- Remove the quesadilla from the skillet and cut into four slices. Repeat with the remaining tortilla and chicken mixture.
