Keto Chicken Quesadilla

A keto chicken quesadilla is a delicious low-carb and high-protein meal that is perfect for those on a keto diet.

Recipe:

Ingredients:

  • 2 low-carb tortillas (such as Mission Carb Balance)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1 cup cooked and shredded chicken breast
  • 1/4 tsp. chili powder
  • 1/4 tsp. cumin
  • 1 tbsp. olive oil
  • 1/4 tsp. garlic powder
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl, mix together the chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Add the olive oil and swirl to coat the pan.
  3. Add the diced onion and bell pepper to the skillet and cook until they are softened, about 3-4 minutes.
  4. Add the shredded chicken and spice mixture to the skillet. Combine it by stirring and cook until the chicken is heated through, about 2-3 minutes.
  5. Remove the chicken mixture from the skillet and set aside.
  6. Place a tortilla in the skillet over medium heat. Sprinkle half of the shredded cheese on one side of the tortilla.
  7. Add half of the chicken mixture on top of the cheese. Fold the tortilla in half, pressing down with a spatula to seal.
  8. I cooked it for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted.
  9. Remove the quesadilla from the skillet and cut into four slices. Repeat with the remaining tortilla and chicken mixture.
