Keto Coq au Vin is a classic, mouth-watering dish. It is a healthy and comforting dish with a quite basic recipe and a fancy French name. Coq au Vin (keto) is as flavorful as the original one. It is a keto-friendly recipe with a low-carb content of just 6.3g carb. The fat content of this recipe is very high because of the bacon choice as I used smoked bacon which contains a high amount of fats. It also varies on using chicken either it has skin or chicken breast. One more interesting fact about Keto Coq au Vin is if you skip red wine and onions and use fewer mushrooms then the carb count will reduce further.

INGREDIENTS

  • Six slices of chopped bacon
  • Six bone-in-skin chicken thighs
  • Pepper (black) and salt
  • Six ounces of mushrooms quartered or sliced
  • A quarter cup of chicken broth
  • One tablespoon of tomato paste
  • Two spring thymes
  • One zucchini
  • Half medium red pepper
  • Half teaspoon glucomannan

INGREDIENT NOTES

Bacon

  • If you want crispy bacon, chop it before putting it into the oven.

Chicken thigh

  • Chicken with bone and skin is good for this recipe. You can also use drumsticks as well.

Low carb vegetable

  • The traditional recipe for Coq au Vin includes mushrooms, onions, and carrots. However, I replaced these vegetables with low-carb vegetables like zucchini and red pepper and reduced the amount of onion and mushrooms.

Aromatics

  • Onion, garlic, and thyme give the aroma to the dish.

Thickening agent

  • Glucomannan is used to stabilize its thick consistency in this recipe. For this purpose, we can also use xanthan gum.

Red wine

  • Dry red wine is used in this recipe to give the flavor. If you are following the keto diet and you are very concerned about carb counts you can skip it.

INSTRUCTIONS

Cook the bacon

  • Cook the bacon for four to five minutes, or until crisp, over medium heat in the oven. Transfer the bacon to the paper towel-covered plate.

Brown the chicken

  1. First, dry the chicken with a paper towel.
  2. Sprinkle it with pepper (black) and salt all over the chicken place the chicken skin side down.
  3. Cook it without disturbing it for four minutes to brown the skin.
  4. Remove it from the pan.

Saute the mushrooms

  1. Add the little oil to the pan add the mushrooms, onion, and garlic, and toss it for two minutes.
  2. Scrap the fond (brown bits) from the sides of the pot and add the wine (red) to deglaze the pan.
  3. Heat it for about minutes (two to three). Until it gets half reduced.

Simmer and cook

  1. Add the paste (tomato) and chicken soup and mix it up until combined.
  2. Add the chicken to the mixture skin side up and add two-thirds of the bacon.
  3. Cover the pot with the cap and cook it for forty-five minutes.
  4. Add the soft vegetables zucchini and red pepper when it is partially cooked.

Thicken the sauce

  1. Add half a cup of chicken broth in the cup and whisk the glucomannan in it properly.
  2. Put the mixture slowly in and mix it to combine.

Serve

  1. Add the salt and pepper (black) according to need. Add the leftover bacon.

TIPS

  • If you are using the same pan for mushrooms that are used for bacon and chicken thighs you do not need any excess oil to saute the mushrooms.
    Zucchini and red peppers are softer vegetables and get done in a short time. So add them when the dish is half cooked to avoid getting it mushy.
  • The sauce doesn’t need to be thickened if you dislike its thick consistency. I prefer to use glucomannan over xanthan gum. Xanthan gum gives a more slimy texture than glucomannan.
