Ingredients:

For the Keto Garlic Bread:
  • 1 large cauliflower head
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup almond flour
  • 2 large eggs
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
For the Garlic Butter Topping:
  • 4 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • Salt to taste

Instructions:

1. Prepare the Cauliflower:
  • Preheat your oven to 375°F (190°C).
  • Cut the cauliflower head into florets. Place the florets in a food processor and pulse until they resemble fine “rice.”
  • Transfer the cauliflower “rice” to a microwave-safe bowl and microwave on high for 5 minutes. Let it cool.
  • Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to achieve a bread-like consistency.
2. Make the Keto Garlic Bread Dough:
  • In a mixing bowl, combine the cauliflower, minced garlic, grated Parmesan cheese, shredded mozzarella cheese, almond flour, eggs, fresh parsley, dried oregano, garlic powder, salt, and pepper. Mix until well combined.
3. Shape and Bake the Garlic Bread:
  • Line a baking sheet with parchment paper.
  • Spread the cauliflower mixture on the parchment paper into a rectangular or oval shape, about 1/4 inch thick.
  • Bake for 25-30 minutes or until the bread becomes firm and slightly golden.
4. Prepare the Garlic Butter Topping:
  • In a small saucepan, melt the unsalted butter. Add the minced garlic and cook for about 1-2 minutes until fragrant. Remove from heat and stir in the fresh parsley and a pinch of salt.
5. Finish the Garlic Bread:
  • Once the bread is baked, remove it from the oven.
  • Brush the garlic butter topping evenly over the surface of the bread.
  • Return the bread to the oven for an additional 5 minutes, allowing the garlic butter to infuse into the bread.
6. Slice and Serve:
