Recipe: Keto Sandwich Bread

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup ground flaxseed
  • 1/4 cup psyllium husk powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 large eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened almond milk
  • 1 tsp apple cider vinegar
  • Sesame seeds or poppy seeds for topping (optional)

Instructions:

1. Preheat and Prepare:
  • Preheat your oven to 350°F (175°C). Grease and line an 8×4-inch (20×10 cm) loaf pan with parchment paper, leaving some overhang for easy removal.
2. Combine Dry Ingredients:
  • In a large bowl, whisk together the almond flour, coconut flour, ground flaxseed, psyllium husk powder, baking powder, and salt until well combined.
3. Mix Wet Ingredients:
  • In another bowl, whisk the eggs until they are well beaten.
  • Add the melted coconut oil, unsweetened almond milk, and apple cider vinegar to the eggs. Mix until thoroughly combined.
4. Combine Wet and Dry Ingredients:
  • Pour the wet mixture into the bowl with the dry ingredients. Stir until a thick, dough-like batter forms. The mixture will thicken quickly due to the psyllium husk.
5. Transfer to Loaf Pan:
  • Transfer the dough to the prepared loaf pan. Use a spatula to smooth the top.
  • Optionally, sprinkle sesame seeds or poppy seeds on top for extra flavor and texture.
6. Bake:
  • Bake in the preheated oven for 50-60 minutes, or until the bread is firm to the touch and has a golden-brown crust.
7. Cool and Slice:
  • Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, use the parchment paper overhang to lift the bread out of the pan and onto a wire rack to cool completely.
8. Slice and Serve:
