Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 can (4 oz) chopped green chilies
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- Fresh cilantro, chopped (optional)
Directions:
- I preheated the oven to 375°F.
- Then I heated the olive oil in a large skillet over medium-high heat.
- After that I seasoned the chicken breasts with salt and black pepper.
- To the skillet, I added the chicken and cooked for 6-8 minutes per side, or until it became browned and cooked through.
- Then I removed the chicken from the skillet and set it aside.
- To the skillet, I added the garlic and onion and cook for 2-3 minutes, or until it became softened.
- Added the chopped green chilies to the skillet and cooked for 1-2 minutes.
- I poured in the heavy cream and stirred to combine.
- To the skillet, I added the shredded cheddar cheese and stirred until it got melted and well combined.
- Season the sauce with salt and black pepper to taste.
- Return the chicken to the skillet and spoon the green chili sauce over the top of each breast.
- Bake for 10-15 minutes, or until the sauce is bubbly and the chicken is heated through.
