Keto Green Chili Chicken

Recipe for Keto Green Chili Chicken:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 can (4 oz) chopped green chilies
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh cilantro, chopped (optional)

Directions:

  1. I preheated the oven to 375°F.
  2. Then I heated the olive oil in a large skillet over medium-high heat.
  3. After that I seasoned the chicken breasts with salt and black pepper.
  4. To the skillet, I added the chicken and cooked for 6-8 minutes per side, or until it became browned and cooked through.
  5. Then I removed the chicken from the skillet and set it aside.
  6. To the skillet, I added the garlic and onion and cook for 2-3 minutes, or until it became softened.
  7. Added the chopped green chilies to the skillet and cooked for 1-2 minutes.
  8. I poured in the heavy cream and stirred to combine.
  9. To the skillet, I added the shredded cheddar cheese and stirred until it got melted and well combined.
  10. Season the sauce with salt and black pepper to taste.
  11. Return the chicken to the skillet and spoon the green chili sauce over the top of each breast.
  12. Bake for 10-15 minutes, or until the sauce is bubbly and the chicken is heated through.
  13. You may garnish with chopped fresh cilantro, if desired, and serve hot.
