- ½ cup filtered water
- ½ cup butter flavor coconut oil
- 2 tbsp. lemon juice (freshly squeezed)
- 2 tbsp. Erythritol
- ½ – 1 tsp. liquid stevia
- 1 tsp. tamari
- ¼ tsp. sea salt
OTHER INGREDIENTS:
- ¼ cup coconut oil
- 1 piece of garlic (minced)
- 1 tsp. finely chopped garden-fresh ginger
- Three green onions (chopped)
- 3 boneless chicken thighs (with skin)
- 2 cups of broccoli florets
- 1 tbsp. fresh cilantro (chopped)
- 1 tbsp. cashews (crushed)
INGREDIENT NOTES:
GUAR GUM:
- Guar gum is added to the lemon sauce to thicken its consistency; we can also include xanthan gum in the soup in place of guar gum it works the same way.
COCONUT OIL:
- I use coconut oil for the sauce as well as for saute the vegetables. We can add butter to the sauce and saute the vegetables.
CHICKEN:
- I use thighs of chicken with skin and without bone. You can have the chicken without bone and skin.
VEGETABLES:
- I use fresh garlic, ginger, green onions, and cilantro for the best taste in the soup.
TAMARI:
- Tamari is used in place of soy sauce to make this recipe of lemon chicken.
LEMON JUICE:
- I squeeze lemon by myself to add the juice in the lemon chicken. You can also add bottled lemon juice as well.

INSTRUCTION:
- Take a small bowl adds guar gum and water and leave it for ten to fifteen minutes till it gets thickened.
- In the meantime, cook the chicken.
- Take a skillet (large) and put it on heat (medium).
- Add the oil (coconut) to the skillet and warm up the oil.
- When the oil is hot enough to proceed forward; then add ginger, garlic, and onion to the oil (coconut)
- Then saute them till you get a nice aroma for around two to three minutes.
- Include chicken in the skillet and increase the heat of the stove (medium-high).
- Cook it for five to six minutes and until the chicken pieces get golden brown from both sides.
- Turn the sides of the chicken during cooking to get cooked properly.
- Take a saucepan adds the butter (coconut flavor) and melt it on the heat (low).
- Add the tamari, salt, stevia, lemon juice, and Erythritol in the saucepan and mix it.
- Add the guar gum mixture to the saucepan increase the heat (high) and boil it.
- Decrease the heat (low) and let it cook till it gets thickened around ten to fifteen minutes.
- Have a pan and pour the water in and boil the water.
- Add the broccoli and boil it for two to three minutes till it gets cooked lightly.
- Get the broccoli out of the water.
- Transfer the lemon sauce to the chicken and give it a good mix.
- Decorate the dish with cilantro cashews and broccoli.
TIPS:
- You can use any other oil (keto-friendly) in place of oil (coconut).
- We can use simple butter in place of butter-flavored coconut oil.
