INGREDIENTS

CREAM CHEESE CEREAL:

  • One third cup of keto cereal (cinnamon)
  • Two and a half ounce of Cream cheese block
  • Five tablespoon of powdered swerve sweetener
  • Two and half tablespoon key lime juice
  • Natural green food coloring (optional)
  • One forth cup of heavy whipping cream

TOPPING:

  • One cup of whipped cream
  • One forth cup of swerve
  • One ounce of cream cheese (for stability)
  • Half teaspoon of vanilla extract

INGREDIENTS NOTES

KEY LIME:

  • You can use fresh key limes or bottle juice from store or you can use traditional or Persian limes juice as a substitute

KETO CEREAL:

  • I use keto cereal (cinnamon) you can use keto crackers or simply eat the cheesecake with crust as a mouse.

CREAM CHEESE:

  • Use the proper cream cheese block not the cream cheese spread. It will not give the required results.

FOOD COLOR:

  • I add two to three drops of food coloring, but if you want more color add one to two more drops carefully as more food color give bitter taste.

INSTRUCTIONS:

CEREAL CRUST:

  1. Take a zip lock bag and add the cereal and make its crumble with meat mallet or rolling pin.
  2. You can also add the cereal in the food processor for grinding purpose.
  3. Make two equal portions of the crushed cereals.

CHEESECAKE FILLING:

  1. In a medium vessel, add cream cheese, lime juice and powder sweetener and beat it until get gets smooth consistency.
  2. In the other bowl pour the whip cream, food color, add sweetener and whip it until stiff peaks is form.
  3. Separate some whipped cream for topping.
  4. Fold the remaining cream with cream cheese.

ASSEMBLY:

  1. Put the divided crushed cereals in to two separate jars
  2. Spoon out the cream and cream cheese mixture over the cereal.
  3. Whipped cream for topping (optional)
  4. Take a vessel add the whipped cream, sweetener, vanilla/lime extract and cream cheese for stability.
  5. Whip it until soft peaks.
  6. Decorate the whip cream toppings to the cheese cake jars.
  7. Your Keto Lime Cheese Cake is ready.

TIPS

  • If you don’t like taste of lime you can simply use Delish Jell-O mixes as well.
  • You can also make crumble of cereal in a simple plastic or paper bag.
