Keto Salsa Fresca Chicken Bake is a low-carb & healthy dish. It contains chicken protein along with fresh veggies & cheese. It is a nutritious & fulfilling dish that you can have at dinner. It is not a difficult or heavy recipe & gets ready in less than 60 minutes. It looks very presentable due to the bright-colored fresh veggies. I made this dish by inspiring it from Mexican cuisine. INGREDIENTS:

Chopped tomatoes, 2 cups
2 pounds of thighs (chicken)

Cheddar cheese (shredded), 1.5 cups
One & a half tbsp, oil of olives
Salt to taste
Taco seasoning, 1.5 tbsp
To taste of powdered peppercorn
Minced jalapeno (medium-sized), 1
2 minced garlic cloves
Chopped onion, 1/3 cup
2 tbsp of lime juice
Chopped cilantro leaves, 1/4 cup

INGREDIENT NOTES:

ONION:
Adding a little onion (minced) gives the classical flavor base to our dish.

CHICKEN:
It is your personal preference; you may use chicken thighs or breasts as you like. We are using the thighs of the chicken here. They will not be too dry. We recommend using chicken without bones & skin here.

CHEESE:
You may use any white cheese. I bought the fresh cheddar cheese & shredded it myself.

TACO SEASONING:
If you make the taco seasoning by grinding spices yourself, it will bring you amazing results. The spices, if ground fresh, will have a strong taste & aroma. You may use the store-bought taco seasoning if you are short on time.

GARLIC:
You may use the powder of garlic. The greatest flavor will come when you mince fresh garlic.

TOMATOES:
Use the fresh tomatoes, which are the basic item of the salsa.

LIME JUICE:
To spark the freshness & boost the taste, use fresh juice of lime & lemon.

JALAPENO:
Include the jalapenos to add spice to your salsa. If you’d like it spicy enough, then use its seeds as well.

CILANTRO:
The use of cilantro adds color & freshness to our dish. But if you’d like, you may leave it out.

INSTRUCTIONS:

  1. Switch the oven on & heat it empty at 375 degrees F.
  2. Place the washed thighs of chicken on the cutting board.
  3. Dry them by patting the chicken using a kitchen towel.
  4. Now, use the sharp knife to cut the chicken into cubes of bite-sized (1-inch).
  5. After that, chop the tomatoes & remove their seeds.
  6. Next, chop the cilantro & onions as well.
  7. Now, mince the cloves of garlic & jalapenos.
  8. Place a big vessel in your workplace.
  9. Make a mixture using oil of olives & taco seasoning.
  10. Put pieces of chicken into it & coat them well.
  11. Place the chicken pieces that have been coated in the baking dish (ceramic/glass).
  12. Pick another vessel & include all the chopped & minced veggies.
  13. Season them with powdered peppercorns & salt, then combine them well.
  14. Transfer the salsa over the coated chicken using a spoon (slotted).
  15. You can discard the liquid in this manner.
  16. Now make a layer of cheddar cheese (shredded) over the salsa layer.
  17. Insert your baking dish (glass/ceramic) into the oven.
  18. When the core of the chicken reads 165 degrees Fahrenheit, it is tender.
  19. As it tenderizes, take them out of the oven.
  20. Let them come to the surrounding temperature, then serve.

TIPS:

When using fresh veggies in exercise care, they will release moisture. The solution is to pat dry the chicken well. Use a slotted spoon to transfer the salsa. It will keep away the extra moisture. Following all these precautions, there must be some water at the end, but it will be tasty soup. You will enjoy it.

STORAGE INFORMATION:

FREEZER:
You can freeze the coated chicken in a locked vessel for some months. You may also freeze the baked chicken. Defrost the chicken the night before. Then arrange it in the baking dish, topped with salsa & cheese layers. Then bake.

FRIDGE:
Keep the salsa & coated chicken separate in the fridge. You only have to arrange all the items in the baking dish & put it to bake.

What is another name for salsa fresca?
