DIRECTIONS
- First you need to heat up it over low flame.
- Add corn and heat till roasted and golden, 8 to 10 minutes.
- To prevent burning, stir from time to time.
- Allow to cool a little.
- Put the sour cream & Greek yogurt in a big bowl.
- Add paprika, chili powder, garlic powder, & lime juice and stir.
- Season with pepper and salt before serving.
- When somewhat cooled, fold in roasted corn.
- Add feta or cotija cheese & stir.
- Add the red onion & chopped cilantro.
- Stir till everything is well blended.
- Serve warm/chill in the freezer for half an hour.
- If preferred, garnish with more cheese, cilantro, & chili powder.
- Serve as a taco topping, alongside baked chips, or with vegetable sticks.
TIPS
- To have a spicy one, add a sprinkle of hot sauce.
- Add black beans/diced peppers to bulk it up.
- Take roasted frozen corn so that it is not time-consuming.
- Chill to get a stronger taste combination.
