Weight Watcher Yucca Fritters

 

Ingredients:

  • Cottage cheese: 1/2 cup.
  • Egg: 1.
  • Grated yuca: 2 cups.
  • Cooking spray.

Instructions:

  1. I was peeling the yuca and chopping it into manageable pieces.
  2. It cooks for almost a few moments; it is soft and tender, and any tough fibers must be eliminated from the center.
  3. Integrate everything in a mixing bowl and mix well to combine the grate-cooked yuca, egg, cassava meal, cottage cheese, and salt.
  4. Form the Fritters: Using small amounts of batter, form the mixture into spherical fritters that range in diameter from one to two inches.
  5. Transfer them to a paper-lined dish or tray.
  6. Warm the Air Fryer: Cool down your air fryer at 375 degrees Celsius (a total of °C) for five minutes.
  7. Prepare the crumbs: After the fritters are in the air fryer, put the spray with cooking oil.
  8. As you place them inside the air fryer basket in just one layer, guarantee that they are not touching.
  9. If necessary, cook in batches to prevent crowding.
  10. Cook the fritters in the air fryer for ten to twelve minutes, turning them over halfway through, or till the outsides are crispy and golden brown.
  11. Take the fried fritters out of the air fryer and let them cool a little before arranging them on a platter.
  12. Serve them hot with your preferred dip or snack and put them on for almost a few minutes.

Notes:

Depending on how thick the yuca is, the recipe’s required amount of flour or cornmeal will change. Gradually stir in the flour til the dough is smooth and comes off the palms easily.
To guarantee that the fritters brown uniformly on all sides while cooking in the air fryer, don’t forget to flip them every seven minutes.
