Ingredients

  • One pound of 98% lean ground chicken
  • Half a cup of whole grain breadcrumbs
  • One egg
  • 1/4 cup plain Greek yogurt without fat
  • Two minced garlic cloves
  • 1/4 cup of Parmesan cheese, grated
  • Half a teaspoon of Italian seasoning
  • 1/4 tsp black pepper and salt
  • 1/4 tsp onion powder
  • One tablespoon of optionally chopped parsley
  • Spray for cooking

INGREDIENT NOTES

Ground chicken:

  • Keep SmartPoints down & lower fat using lean (98%) to do so. Ground turkey also can.

Breadcrumbs:

  • Fiber comes from whole wheat. You may use gluten-free as required.

Parmesan:

  • Parmesan grates provide the flavor, but not many points there. Be not excessive.

Yogurt:

  • They are maintained moist by Greek yogurt & also contain protein. Do plain & nonfat.

Garlic:

  • Minced fresh garlic has an intense flavour. It will work with garlic powder.

Seasoning:

  • Make it with basic spices such as Italian seasoning. Fling in red crushed pepper to taste.

DIRECTIONS

  1. Set the oven’s temperature to 375°F (190°C). Apply nonstick spray to the tiny loaf pan or muffin tray.
  2. Combine the ground chicken, breadcrumbs, Parmesan, egg, yogurt, Italian seasoning, garlic, onion powder, salt, & pepper in a large bowl.
  3. Mix with a spoon or clean hands till well blended. Avoid mixing too much.
  4. Evenly divide the mixture into six parts. Press each into tiny loaf pans or muffin cups.
  5. Bake till the internal temperature reaches 165°F (74°C), 22 to 25 minutes.
  6. Before taking it out of from the pan, must give to it at least five minutes for cool down.
  7. If using, garnish with fresh parsley. Warm up and serve.

TIPS

  • Bake in a silicone muffin tin so they can be easily removed.
  • Add extra vegetables in the form of diced spinach or zucchini.
  • You may also multiply the batch and freeze extras.
  • Top with OR without a spoonful of marinara or low-sugar ketchup.

DATA STORAGE

Refrigerator:

  • Keep cooked meatloaves for no longer than four days in a sealed bag. Heat up again in the oven/microwave.

Freezer:

  • Individually wrapped cooked meatloaves should be frozen. Keep for at least two months. Before reheating, let it thaw overnight.

  • Yes, ground turkey is good as well.

May I make one big loaf?

  • Yes, cook in a loaf pan (40 to 45 mins). Check with the thermometer.

What may I substitute breadcrumbs with?

  • Use crushed high-fiber cereal or oat flour.

Do these dry?

  • No, the yogurt and the egg make them wet. Don’t overbake.

Are they safe to air fry?

  • Indeed. Form into little patties and cook for 15 to 18 minutes at 375°F in an air fryer.
