SELF-RISING FLOUR:

  • Here, we will use self-rising flour in our cake, so it’s easy for you. You don’t need to gather individual ingredients for the cake. Your coconut cake will become fluffy from adding this flour as well. Mix all-purpose flour, salt, & baking powder for another idea.

GRANULATED SWEETENER:

  • This sweetener will help make your cake sweet without sugar. This will also keep you cake light because we are not using any sugar in it. Use stevia blend or monk fruit for this purpose.

UNSWEETENED APPLESAUCE:

  • Your cake will not become dry if you use this in it. Unsweetened applesauce will help make your dessert moist as well. Also, this ingredient will not make your coconut cake heavy to eat. Add light sour cream or mash a banana for an alternative idea here.

FAT-FREE GREEK YOGURT:

INSTRUCTIONS:

  1. Warm your oven to 175°C and spray the nonstick cooking spray on the pan lightly.
  2. Then take your medium bowl and mix shredded coconut, granulated sweetener, and self-rising flour.
  3. Now use a mixing bowl to mix light coconut milk, vanilla, eggs, Greek yogurt, & applesauce.
  4. Take the mix from the medium bowl and add it to the other one to combine the ingredients with care.
  5. Add this complete mixture to the cake pan and bake it for 32 minutes, checking it with a toothpick.
  6. Cool your cake for 15 minutes and then put it on the rack.
