- 1½ tbsp pure maple syrup
- One tbsp water
- 3 tbsp balsamic vinegar

BUTTERNUT SQUASH:
- This squash gives sweet and creamy flavor in the platter. It becomes soft from inside and the edges get golden when we roast. You may use sweet potato or acorn squash as another idea.
INSTRUCTIONS:
PREPARE THE VEGETABLES:
- First, include baking papers on the two sheets & warm the oven to 425°F.
- Peel the washed carrots and cut them lengthwise into even halves or quarters.
- Include carrots, olive oil, salt, thyme, garlic powder, and black pepper in the large bowl then toss.
- Cut the peeled butternut squash into similar 1-inch cubes and place them in the separate bowl.
- Toss olive oil, salt, black pepper, sage, garlic powder, and cinnamon with the butternut cubes.
- Now cut the ends of the Brussels sprouts and chopped them in half through stem or quarter if thick.
- Put the sprouts, olive oil, salt, thyme, black pepper, and garlic pepper in the bowl then toss.
- Then cut the cauliflower into medium-sized florets and put them in the bowl.
- Add olive oil, salt, paprika, oregano, and black pepper then gently mix them.
ROAST THE VEGETABLES:
- Spread a single layer of the carrots and butternut squash on one sheet and roast for 15 minutes.
- Take the sheet from the oven then spread brussels sprouts with cut sides down and cauliflower.
- Then roast the vegetables for twenty-five minutes and turn or toss gently.
PREPARE THE GLAZE & TOPPINGS:
- Whisk maple syrup, balsamic vinegar, Dijon mustard, water, salt, and garlic in the small saucepan.
- Warm the ingredients for 4 minutes and whisk frequently so the glaze does not boil.
- Include the chopped pecans in the dry skillet and cook for 5 minutes, stir frequently.
- Crumble the reduced-fat feta into small bowl properly and chop the parsley then remove the thyme leaves from stems.
ASSEMBLE THE PLATTER & SERVE:
- Keep the roasted vegetables in different sections of the serving platter and visually separate.
- Scatter the cranberries around the vegetables and sprinkle toasted pecans on the platter.
