  • Quarter cup chopped chives
  • 2 chopped scallions
  • Half cup chopped Castelvetrano olives

STUFFED OLIVE TOPPING:

  • 12–15 pitted Castelvetrano olives
  • 0.5 oz blue cheese
  • One tsp olive oil

INGREDIENT NOTES:

RITZ CRACKERS:

  • They give the main structure to the crust and give a buttery taste in the recipe. Their mild taste works well with the salty cheese and olives. You may use reduced-fat buttery crackers as per your preference.

INSTRUCTIONS:

  1. First, process Ritz crackers, melted butter, salt, and black pepper in the food processor.
  2. Include plain potato chips and pulse a few times to leave some texture for the crust.
  3. Add cream cheese, vodka, olive brine, garlic powder, white pepper, allspice, salt, and lemon zest in the clean food processor.
  4. Process the mixture, then take out 1/4 cup of the cream cheese mixture and refrigerate it.
  5. Then add chopped blue cheese and melted butter to the butter mixture and pulse again.
  6. Include the chopped chives, scallions, and half cup chopped Castelvetrano olives; pulse a few times.
  7. Divide the crust mixture into two equal portions, then divide the cheese mixture into 2 portions.
  8. Cover the ring mold with plastic wrap and leave some plastic hanging over the sides.
  9. Add the first portion of crust, then press firmly into the bottom and refrigerate for 30 minutes.
  10. Spread the first portion of the cheese filling on the crust and chill for half an hour.
  11. Include the remaining crust, chill for 20 minutes, then spread the remaining cheese mixture.
  12. Refrigerate the covered dish for 4 hours and take the reserved 0.5 oz blue cheese.
  13. Divide it into very small pieces and stuff the cheese into the pitted Castelvetrano olives.
  14. Remove the chilled cheesecake from the refrigerator and lift it from the mold.
  15. On top, spread the reserved cream cheese mixture and arrange blue-cheese-stuffed olives.
  16. Lastly, drizzle olive oil on the cheesecake and slice into 8 portions, then serve.
