INGREDIENTS:
- One pound of ground turkey that is 99% lean
- 1 sliced green bell pepper
- 1 small onion
- One sliced red bell pepper
- 3 minced garlic cloves
- A single can (15 oz) of tomato sauce without added sugar
- Three cups of chicken broth with less sodium
- One teaspoon of dried basil
- A single teaspoon of oregano, dried
- One can (14.5 oz) of chopped tomatoes
- Half a teaspoon of paprika, smoked
- 1/2 a teaspoon of optional salt
- 1/4 tsp black pepper
- If you wish to provide more bulk, you may add 1½ cups of cooked brown rice.
- As a garnish, use chopped green onions/fresh parsley.

Ground turkey:
- To make this soup zero points, use 99% fat-free turkey. Smartpoints can be added to other meats.
Bell peppers:
- Sweet and red & green. If you need to, you can substitute yellow/orange.
Onion & garlic:
- A needed part of flavor. Lightly sauté in a little oil/with the use of broth.
Tomatoes:
- Select sugar-free ones. Tomatoes in powder are used in place of tomatoes (In case).
Tomato sauce:
- The unsweetened, low-sodium ones will allow points to be lower.
Broth:
- Use low-sodium chicken soup.
Substitutions:
- You can use vegetable soup to make it vegan.
Spices:
- This has the classic flavor of oregano, basil & paprika. Add red chili flakes to make it hot.
Brown rice:
- Optional, a nice texture and filling. Add it, not as part of other plans, unless it is an older plan.
DIRECTIONS
- Put a big pot of soup on medium heat.
- After adding the ground turkey, sauté it for 5 to 7 minutes, breaking it with the help of a spoon till it turns brown.
- Add bell peppers, minced onion, & garlic. Sauté until tender, about five to six more minutes.
- Put the tomato sauce diced tomatoes & , chicken stock, and stir.
- Stir well.
- Add black pepper, paprika, oregano, basil, & salt (if using). Mix to blend.
- Cook it for at least 20 minutes without a cover when it reaches a boil.
- Incorporate the cooked brown rice, if using.
- For complete heating, simmer for a further five minutes.
- If necessary, taste & adjust the spices.
- Add some chopped green onion or fresh parsley as a garnish before serving.
TIPS
- To make it quicker, to save time, use frozen chopped bell pepper & onion.
- Replace brown rice with riced cauliflower to get another serving of vegetables, but with no points.
- To it, add a small amount of hot sauce/red pepper flakes.
