INGREDIENTS:

  • Four white fish fillets (four ounces each of tilapia, cod, or halibut)
  • Two teaspoons of melted light butter
  • 2 teaspoons of lemon juice
  • One teaspoon of olive oil
  • One teaspoon of lemon zest
  • A teaspoon of minced garlic
  • Paprika half a teaspoon
  • Season with salt and pepper to taste
  • Two teaspoons of parsley, chopped
  • Lemon slices as a garnish are optional

INGREDIENT NOTES:

Fish:

  • Any mild white fish may be used. Thawed frozen fillets as well as fresh ones are used. Pat dry and season.

Butter:

  • It also uses light butter to remain WW-friendly. Melt & mix

Lemon:

  • Lemon juice & zest provide a nice, clean, bright flavor.

Garlic:

  • Crushed garlic/garlic that has been pre-minced is fine.

Olive Oil:

  • It can be used to help brown a fish that is being cooked in a pan. Puts in wholesome fats.

Paprika:

  • Brings out a little warmth, a bit of color. Optional but nice to have.

Parsley:

  • Makes it fresh & colored. Could be changed to dil/chives.

Salt & Pepper:

  • To taste. This can help you to improve everything, so do not skip it.

DIRECTIONS:

  1. If baking, preheat the oven to 375°F.
  2. Now pat fish fillets dry with the paper towels.
  3. In a bowl, combine together the components like olive oil, garlic, lemon zest, etc.
  4. Add salt, pepper, & paprika and stir.
  5. Put the fish on a sheet lined with foil or in a baking dish.
  6. Drizzle each fillet with lemon butter mixture.
  7. Evenly scatter parsley over the top.
  8. Fish should flake readily with a the fork after ten to twelve minutes of baking.
  9. Put a skillet with non stick coating over low heat if you’re pan-searing.
  10. Drizzle a little oil on top.
  11. Cook till golden, for four to five minutes per side.
  12. Before serving, spoon more lemon butter over the top.
  13. If preferred, garnish with slices of fresh lemon.

TIPS:

  • Avoid overcooking the fish; use a fork to test to see whether it is tender enough.
  • When baking, make use of parchment paper to avoid sticking.
  • You may add a little crushed chili pepper to make it hotter.
  • Also, make extra lemon butter and drizzle on rice & Veggies.
  • Use dill instead of parsley to change it up.

Fridge:

  • Leftovers can be kept in the freezer for the next two days in a tightly closed container. Recook the fish carefully so as not to dry it out.

Freezer:

  • Cooked fillets can be kept for a maximum of fourteen days in freezer-safe packaging. Before reheating, let it thaw overnight in a cool place.
