Zucchini Bread Recipe:

  • 1 1/2 cups all-purpose flour or whole wheat flour

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup granulated sugar or coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1/3 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini (about 1 medium zucchini)
  • 1/2 cup chopped nuts (walnuts or pecans), optional

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Set aside.
  3. In a separate large bowl, beat the eggs. Add the granulated sugar, applesauce, vegetable oil or melted coconut oil, and vanilla extract. Mix well until the ingredients are combined.
