Ingredients:

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 4 large eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened almond milk (or any low-carb milk of your choice)
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon banana extract (optional, for flavor)
  • 1/4 cup chopped walnuts (optional, for added texture)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.
  2. In a large bowl, whisk together the almond flour, coconut flour, granulated erythritol, baking powder, baking soda, salt, and ground cinnamon.
