Keto Chicken Fajitas are a flavorful and easy-to-make low-carb meal that’s perfect for those following a ketogenic diet. Tender strips of chicken breast are seasoned with a blend of spices, then sautéed with bell peppers and onions for a classic Tex-Mex flavor.
Ingredients:
- 1 lb boneless, skinless chicken breasts, sliced into strips
- 1 tbsp chili powder
- ONE tsp cumin
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- Juice of 1 lime
- Lettuce leaves, for serving
- Avocado slices, for serving
- Sour cream, for serving
Instructions:
- I took a bowl smaller in size and mixed together the chili powder, cumin, garlic powder, smoked paprika, cayenne pepper (completely optional), salt, and black pepper.
- Then I seasoned the chicken strips with the spice mixture and made sure to coat them evenly.
- I heated the olive oil in a large skillet over medium-high heat. And once it got hot, I added the chicken strips and cooked for 3-4 minutes per side until it got golden brown.
- Then I added the sliced bell peppers and onion to the skillet and continued cooking for an additional 5-7 minutes until the vegetables became tender.
- I squeezed the lime juice over the chicken and vegetables and stirred to combine.
- You may serve the chicken and vegetables in lettuce leaves, topped with avocado slices and a dollop of sour cream.
