Keto Snickers Crepes

Recipe for Keto Snickers Crepes:

Ingredients:

For the crepes:

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 tsp salt
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup water
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1/4 cup granulated erythritol
  • Cooking spray or additional butter for cooking

For the filling:

  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered erythritol
  • 2 tbsp melted butter
  • 2 tbsp heavy cream
  • 1/4 cup sugar-free chocolate chips

Instructions:

  1. In a large mixing bowl, whisk together the almond flour, coconut flour, and salt.
  2. In a separate mixing bowl, whisk together the eggs, almond milk, water, melted butter, vanilla extract, and granulated erythritol.
  3. Pour the wet mixture into the dry mixture and whisk until smooth.
  4. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or butter.
  5. Pour 1/4 cup of the crepe batter into the skillet and swirl the pan to spread the batter into a thin layer.
  6. Cook the crepe for 2-3 minutes or until the edges start to lift from the pan. Flip and cook for an additional 1-2 minutes on the other side. Repeat with the remaining batter, spraying or buttering the skillet between each crepe.
  7. In a mixing bowl, combine the peanut butter, powdered erythritol, melted butter, and heavy cream. Stir until smooth.
  8. Once the crepes have cooled slightly, spread 1-2 tablespoons of the peanut butter mixture onto each crepe, leaving a small border around the edge.
  9. Sprinkle a few sugar-free chocolate chips over the peanut butter mixture.
  10. Roll up the crepes and serve.
