INGREDIENT:
Crust:
- 1 ¼ cup almond flour (125g)
- ¼ cup swerve sweetener
- ¼ teaspoon salt
- ¼ cup butter (chilled and cut into small pieces)
Peanut butter caramel filling:
- 2/3 cup peanut butter (creamy and natural)
- ¼ cup butter
- ½ cup swerve brown
- ¼ cup heavy whipping cream
- ½ teaspoon extract of caramel (or extract of vanilla)
Chocolate Topping:
- 3 1/2 ounces (sugar-free) dark chocolate chip
- 2 tablespoons butter

INSTRUCTION:
Crust:
- Put your oven to heat at three fifty.
- Put the paper (baking) in the 8×8 inch pan and brush it with the oil.
- Add the 1 ¼ cup almond flour, ¼ cup swerve sweetener, ¼ teaspoon salt in the food processor, and grind it a few times add the butter from the top, and continue until they crumble up.
- Add the flour of almond and butter mix to the pan (baking) and press it with a rubber spatula.
- Bake it for several minutes (12-15).
- Take the cookie bar from the oven and allow it to cool down.
Peanut butter filling:
- Take a saucepan (large) and add the 2/3 cup of peanut butter and ¼ cup of butter.
- Cook until peanut butter melts and stir it side by side.
- It can be done in the microwave as well by adding the peanut butter and butter in a bowl and put in the microwave.
- Add the ½ cup of powdered sweetener, ¼ cup heavy whipping cream, and ½ teaspoon of extract of caramel or vanilla.
- Properly incorporate all the ingredients and add it over the crust.
- Spread the peanut butter filling evenly on the crust.
- Put it on the refrigerator to chill for about 30 minutes.
Chocolate filling/ drizzle:
- Take a bowl (small and microwave-safe)
- Add the 3 ½ ounces of chocolate and 2 tablespoons butter to the bowl and place it in the microwave.
- Melt in intervals of 30 sec and stir the chocolate in between.
- Another way to liquefy the chocolate is by placing of heat-safe bowl in simmering water (double-boil method).
- You can place heat heat-safe bowl over simmering water add chocolate and coconut oil in the bowl and mix it to melt the chocolate.
- Pour the chocolate filling over the chilled filling and set in the fridge for 30 mints.
TIPS:
- Melt the caramel on low flame.
- Please do not get your eyes off the caramel on the stove, and be prepared.
- Remove the pan from the stove when it is turning to a nice brown color otherwise, it gets burned easily.
- You can use flour (sunflower seed) instead of flour of almond to get nut-free cookies.
- To make a thinner and smoother drizzle of chocolate use a small amount of coconut oil (½ to 1 tsp.) for ½ cup of chocolate chips.
