The Keto Vegetarian Chimichanga is low-carb and keto-friendly. These make a satisfying and incredibly healthy dinner that you may enjoy every day or when your vegetarian visitors visit.

Making keto chimichangas at home is a simple process. You may use chicken or beef shreds, but I used ground beef that had been flavored with taco seasoning.

You will add cheese, meat, and a small amount of salsa to the tortilla and fold it like a burrito. After that, I just heated some butter (coconut oil also works) and pan-fried the tortilla until it was golden brown and somewhat crispy. Instructions:

  1. Add the chopped onion, garlic, and any desired mushrooms, and sauté in olive oil until the onion becomes tender.
  2. After adding the chopped chiles, press the mixture into the bottom of the pan and cook it without stirring until the onions start to turn golden brown. Then, turn off the heat.
  3. Combine all the ingredients, excluding the tortillas, in a large bowl.
  4. Once you have as many chimichangas as you choose to bake at once, assemble the chimichangas by placing approximately 3/4 to 1 cup of filling on a tortilla, folding the bottom over the filling, folding the sides in, and then gently folding or flipping it over to shut.
  5. Arrange the chimichangas on a baking sheet, drizzle with half a teaspoon of olive oil on each, and bake for fifteen minutes at 400 degrees Fahrenheit.
  6. Add some shredded cheddar cheese to each, serve with more guacamole, salsa, and sour cream, and dig in!
  7. It makes 8 to 10 substantial chimichangas, based on how much filling you use in each.
